  • Bread is life - well, for me anyway! I took my mum's wonderful, homemade bread for granted when she was alive.
My daughter would eat so much of it, and we would scramble in front of the oven as soon as it came out!
Ever since I was diagnosed with SIBO, I embarked on a mission to create all our meals from scratch. This journey of healing not only my body but my family's as well has been a source of inspiration. It involves taking all those traditional recipes I grew up with and bringing them to life in our own kitchen.
Throughout the years, working hard, studying and having no time meant that our food came from somewhere besides the family kitchen.
Our health can suffer when we stray from real, healthy food - a lesson I learned the hard way. Food is not just about enjoyment, it's about nourishing our bodies. We're meant to eat real food without chemicals, fillers, and all the other gunk out there. It's important to be informed about what we put into our bodies.
Embrace the power of your kitchen, no matter how small, with simple food staples (like bread) and reconnect with your heritage. The satisfaction of creating something from scratch, updating it according to your health needs, is truly rewarding.
This beloved Greek recipe has always been a source of comfort and health for me. The simple rustic bread, made with minimal ingredients, is not only delicious but also a healthier alternative. I'm confident that you and your family will enjoy it. Here's the straightforward recipe.
As you follow the video, you'll get a sense of how this bread is made. I personally love a crunchy, dense bread that's perfect for scooping up olive oil and sauces. It might take a few attempts to get it just right, but that's part of the fun and learning process.

    Recipe
    - 2 cups of warm water
    - 2 tbsp yeast
    - 4 cups of flour: I used organic, white baker's flour because I couldn't have brown. Add as you need until the dough is not sticky (the type of flour you use will determine this).
    - Pinch of salt
    - Spray with olive oil to help eliminate the sticky fingers!
If you want more of a sourdough feel, put your dough in a French oven and then take the lid off when it's cooked to brown, making it a bit more crunchy. Try a few different alternatives and see what works for you.
