Kneading dough is a crucial step when making bread. It is the process by which the gluten structure of a dough is formed, making the finished products, soft and fluffy . You'll know you've kneaded a dough enough when it is cohesive, smooth, and elastic; it should bounce back when press. If it's under-kneaded, the dough will be shaggy and tear easily, and ultimately, it won't rise as much as it should it in the oven. If dough is over-kneaded, it will be tough, dense, and chewy. You'll notice that it isn't as easy to fold over or flatten while kneading if you're reaching this point. If you sense that this is happening, set the dough aside to rest for a little while before proceeding, which will allow the gluten to relax.

There are many ways to knead a bread dough manually but the one presented here is the easiest but would be difficult to apply for softer dough..
Any recommendation for softer dough?

Hahhaa ung pinaka una kong gawa na pandesal literal na bato kaya tinawag ng asawa ko na stone bread daw kaya pag gumagawa ulit ako ng pandesal tinatawag ko na din itong stone bread pero medyo may improvement na sya sa awa ng Diyos mapeperpek ko din ang paggawa ng pandesal in due time sabi nga nila practice makes perfect 😅

Ang galing po ng technique nyo, pro sna po next time damihan nyo po ang harina, ung mga four to six cups na lutuan. Mdyo madali lang talaga kasi masahin and harina pag kakaunti lang. Salamat po!

I have a question about my empanada dough.
I followed the recipe , knead.the dough and rested for 30 mins in the refrigerator, formed into balls. When I try to flatten it to form into circle, it won't stay in shape. It goes back. Hoping for your help. Thank you so much

Can it be elastic if not use egg, margarine, milk, olive oil, yeast,baking soda etc, but just salt sugar, water, flour.
