[about me]
Hi my name is Rosie, I'm 26 and my life is a bit confusing so i'm writing this lol.
To make it easy:
- I was born in Northern Italy, in the region of Veneto
- My whole family still lives there (mom, dad and my little sister Marty)
- I moved to Toronto, Canada, at 19 all alone to ✨find myself✨ (spoiler: it didn't work, i got more lost if anything)
So, I live half my life in Italy and half my life in Canada.
Also, my mom is from Moldova (country in Eastern Europe) and my dad is from Calabria (region in Southern Italy) and both my grandmas still live there. So you’ll occasionally see me going there as well.
I hope this clears things up a bit.. or maybe makes them more confusing lol.

My goodness, your Mom is an absolute beast in the kitchen. Handmade, homemade pasta that she rolls and cuts on her own (because she knows exactly how thickly to roll out the pasta before cutting).And everything she makes is seasonal and classic regional Italian cuisine. I hope you are learning from her because her knowledge is a gift and inheriting that from her will be one of the most special legacies you get. She clearly loves you and her family to bits and happily shows you her love daily through the heavenly food she makes for you. I think the answer is ... if you love your job, whatever you do you will do it with joy, lightness and love, practically for you the work will be like a continuous day of celebration .. I consider myself lucky because I do the job I love , not only does it not bother me, but when I'm on vacation I miss it so much.. p.s. I have a fantastic family, I love being with my wife and my children and thanks to the fact that work makes me feel great and makes me happy I can also give joy at home ... so it is also (I think) for Rosie's mother , his videos exude serenity and sweetness between them..

Your mom works so very hard! Wow - also love to see how efficiently she cooks - no nonsense. Pour in the wine/olive oil, stir that sauce, wack that pasta out! She really, really knows what she is doing! That's real home cooking and I am sure that's exactly what her customers come to the restaurant for! This, to me, if what "fine dining" is all about - not a little micro leaf on a scoop of whatever balanced on a slither of something else.

Your mother is quite a woman of substance! She does it all! I live in California, but have traveled extensively, including Italy. I went to culinary school here in the US and worked in the industry for a long time. I am retired now, but I still enjoy learning about food from around the world. It is interesting to see foods that are so commonplace in some countries and are illegal in other countries. For instance, horse meat is illegal in the US. I am really enjoying your videos and have watched you from the very beginning. It's been fun seeing you and your content evolve and mature. Now I’m a chef and am working to open my own restaurant one day. I hope my daughter and son look up to me the way I looked up to my mom, and the way you look up to yours. I am so impressed by how CLEAN the kitchen stays when your mom works. I worked in a kitchen for a while and I was always so stressed because my coworkers didn’t always wash their hands and were very messy about prep and cleaning. Your mom is an incredible lady. Rosie, please show the viewers that restaurants in Italy chefs prepare food for all the staff as well. I used to work in Italy in a restaurant, and every day before service, our chef prepared mouth-watering food for all staff members. This is one thing that many people are not aware of. I would love to see the reaction of people in the comments section when you make a video about it. 😊

You should definitely share the name of your mom's restaurant so we can come if we ever travel to Italy she is amazing!Also fun fact:I am from the Aegean side of Turkey and we have the exact same dessert as the chocolate salami, here it is called mozaik pasta(mosaic cake in English)because generally we use a little bit bigger biscuits than your mom so it looks like a mosaic of sorts.We also have lamb arrosticis(sorry if I misspelled) but they are called çöp şiş or kuzu şiş here(it means garbage shish and lamb shish in English, don't ask me why it is named like that I have no idea😂😂)I love Aegean food culture and your mom is an amazing example of it.

In many post-USSR countries people make "chocolate sausage". My mum still making it sometimes but with condensed milk and cocoa powder addition to the chocolate. So, I guess this basic receipt is international due to its easyness
