A fantastic question. The bigger pieces I sell to a store locally who gives me store credit which I use for supplies like blades and dyes(or sell on craigslist locally). I also donate the smaller pieces through the same store that gives them to a local summer camp for kids crafts. The really small scraps I just throw away.

Use hdpe for your table top and buy a high quality head knife, makes a huge difference.
