  • Although I like my steaks medium rare I realize a lot of people like well done. I decided to see if I could cook a steak that is well done and juicy!

    Big Cat, Thanks to you, I was finally able to do a steak that my Wife really liked. She complains every time I do steaks on the griddle. I usually have to take hers back out and cook it more. I followed your instructions and she was a happy camper. No pink, enough sear and still juicy. The only thing I did different was I used the Grill Grates. The smooth side for hers and ribbed side for mine. I started hers about 10-15 minutes before mine. So thanks again for a great video. Ron

    I've got a friend who swears he cooks well done steaks as juicy as med-rare. I dispute it. He says he puts it on his kettle on the cooler side and takes 30 minutes to get there. He says, "You couldn't tell it from a med-rare steak." Yeah, right. 🤣 As my dad used to say, "It's a good idea, but it won't work." 🤣🤣🤣

    Hey bro maybe try one of those sous vide things. Seems like you could get it close to well done then throw it on the griddle to get color.
    I’ve never tried one, but who know, maybe it would work.
    Nice videos though bro! Just got me a Blue Rhino flattop and love it!

    BigCat you have to get the right tasters to let you know, I use to ear well done until I went to aback yard Bbq and had a Tri-tip MAN ! It was medium rare and I fell in love with 😍 that !! I know some people like to slide there steaks 🥩 across the grill and eat but that tri-tip was delicious hey do you have a Tri-tip video on the Blakstone ???
    Your mission BigCat 305 if you choose to take your mission is ready.

      Thanks Mark!!! I have a lot of friends in California that do videos on Tri-tip all the time. They are not in the local grocery stores but I have seen them in butcher stores. I'm going to have to get one, never tried it...

  • @4seasonsbbq
    @4seasonsbbq Před 2 lety +2

    Great experiment Mike but I'm with you, mid rare is where it's at. The steak did look good on the outside but don't judge a book by its cover or a steak by its sear. At my butcher shop and grocery store the steaks are about $1 to $1.50 less a pound if there is a bone, I spose to make up for the bone. Great video brother 👍

  • @BBBYpsi
    @BBBYpsi Před 2 lety +1

    I also like mine Medium rare. Well done for a ribeye would be around 155. Also the constant poking with the meat thermometer will help leak out the juices. When I was really young pre teen & early teens well done was the only way I would eat a steak. Most people that eat it that way say they do not want it bloody. That red juice is not blood but juice & helps the flavor. Good experiment.

    Great demonstration. I used to eat them that way until I got smart. LOL. But I do prefer medium over medium rare. But I find that medium is hard to hit so medium rare works for me anymore. You take care and hope you have a great week

    I saw the thumbnail before reading the title and thought ugh what a dry disgusting looking overcooked steak, but the title intrigued me so let's see what you have to say.
    Personally I think people who prefer well done haven't tried medium rare. I used to get steak cooked well done, but the first time I tried medium rare I was in heaven and realised I'd never truly enjoyed steak before.

    Good morning! I have this dellima, my wife likes her meat well done on everything...go figure. What I do is sear the outside of the steak on high heat, then put a cooling rack on the griddle and put the steak on it. Then use a dome and hit it with some steam and check the internal temp till desired temp (165° or higher). Then I have a Happy wife and a happy life. Thanks for the video and GRIDDLE ON DUDE.

    Big, is it good to rest meat on a wooden board? I’ve always heard not to use a wooden cutting board?

    • @cookingwithbigcat
      @cookingwithbigcat  Před 2 lety +2

      Hey Buckshot, I've heard the same thing over the years. I've never gotten sick and have never gotten anyone else sick using wooden cutting boards. I will say I am very adamant about cleaning the cutting boards the second I am done using them. Also, once in a while I will sprinkle some salt and then rub half of a lime with the salt and the acidity cleans up anything that might have soaked in. Hope this helps!!

    Well done ? Are you a crazy communist? LOL ! My dad cooked everything well done, his burgers resembled briquettes or hockey pucks and as dry as the Sahara Desert ! I didn’t say this before but it is nice to see ya back on the Blackstone! I think a bacon press would have helped with the center of the steak cooking faster ! Nicely done Brother !
