- Thick Steak for beginners on the Blackstone. This is the easy way to make perfectly seasoned, great crust, juicy thick steaks step by step. Enjoy!!!
1. Visit your local butcher and pick up a 1.5” - 2” steak. My preferred cut is the Ribeye due to its high fat content. Look for good marbling (Fat = Flavor).
2. Season liberally with course salt and ground black pepper. Don’t forget the sides.
3. Marinade in the fridge for at least 1 hour up to 24 hours. Let sit 30 minutes at room temperature before cooking.
4. At a high temp (450-500 deg), spread a high temp oil (Canola/Avocado), melt unsalted butter, sear steak for 2 minutes on each side until desired internal temp.
5. Let steak rest for 5-10 minutes before slicing.
Doneness Temperatures:
Rare = 120°-130°F (pull at 115°-120°F)
Medium Rare = 130°-135°F (pull at 125°-130°F)
Medium = 135°-145°F (pull at 130°-135°F)
Medium Well = 145°-155°F (pull at 140°-145°F)
Well = 155°F and up (pull at 150°-155°F)

I have to say this was the best video I've watched concerning cooking on the flat top griddle. I have had a Blackstone for several years and absolutely love it. But, there have always been a couple things that intimidated me. I was afraid of thick steaks and bone-in meat like chicken and pork chops. My son gave me two beautiful fillet mignon cuts for my birthday that were 2" thick. I've been afraid to try to cook them on the Blackstone. Yesterday, I watched this video before I went to the grill and they turned out perfect!

Let me first say that that is a gorgeous rib eye that you purchased. Then technique of surrounding the seasoning around the steak and then rolling it around I probably will borrow from you. Now I was instructed not to flip steaks a lot so I was taught for every half inch steak is three to four minutes per side and you will come out with a perfect medium rare steak.

Hey Dame, neither lol. It's been a wild few months of new job/boss, new house, and covid hit me hard for 3 weeks. I plan on getting back in it soon. I'm not going to lie, it has been a nice break.
