    I just want to say this recipe is amazing. I have only had my foodi for a couple weeks and have tried about 6 of your recipes. they have all been absolutely amazing but this one takes the cake.     I am so glad I found you. Your videos and recipes for the Ninja Foodi are delicious, and my NF now goes from being a large paper weight to an essential part of my kitchen! Am working my way through your recipes and every one I see I want to make.     Okay Louise my wife just made it for me! It came out amazing and she used the Ninja foodi all by herself for the first time! She was a little mad because she thought it came out better than hers LOL. She made it directly in the insert.     I’m making this tonight to go with our sliders , so I made extra with breakfast. Instead of laying the bacon flat I stood it on its side. I was impressed that it actually worked. It came out so crisp that I’m gonna cook my bacon đŸ„“ like this every time. Can’t wait to see how the Mac n cheese comes out.

    That idea with the rouge is great I make alot of mac and cheese in my foodi for me it a good cheap or not so cheap depends on the cheese I use but anyways I now can make one batch and make enough rouge for several more to put in a jar for later thanks

    Oh oh. I know. Because the fan blade is round and spins to create air flow, the tips of the blades are traveling faster than the sections close to the center. So there is greater air flow towards the outside than the center.

    Try using double cream instead of milk, and adding powdered English mustard and some crushed chillies to taste
    You can also add a splash of Worcestershire sauce

    Love the idea of using smoked cheeses in this dish and combining the creamy cheeses with the cheddar! Who would have thought you can create a roux like that?!? Looks amazing!!! Question: More and more I'm seeing mac & cheese recipes that don't include mustard. I've always used dried mustard, thinking that it added something. Does it?

      That's a good question, Wendy! I know that dry mustard is a popular ingredient in mac and cheese, I just have never found it to make a difference if a positive way. On the flip side, it can really affect the flavor in a bad way if too much is used. I just skip it, but that is my preference. I would say that this is a personal preference and if you like it in your mac and cheese, add it in. What I though really made a difference in this mac and cheese was that tiny bit of chipotle powder. Wowza, is that good!

    Oooh, yum. Just wondering if there is any way to fit two of these cast iron pans in the Foodi, perhaps using a silicone sling and the handles alternated? I'm about to buy at least one of the pans, but would get two if I thought it would work.

      Make it right in the inner pot! I only did it this way because it's pretty, but I made it a few months ago for company and needed it to be done at the same time, so I used the inner pot. Same directions.

    I want to make this for the holidays, does it reheat well in the oven with the bacon through out? Or does it get soggy?

      I usually add a little cream or half and half and it reheats just fine. The bacon isn't super crunchy to begin with, but the flavor is amazing. If you want crunchy bacon, just crumble some on top or even stir it in after reheating (but don't skip the bacon while making the recipe because it adds so much flavor to everything) and then broil the top.

    I love your recipes. Got a new foodie 2 weeks ago and already made the stew which I had amazing reviews and the meat loaf with good reviews. Now I want to make this but i was wondering if I could just put the cheese and Bacon that you put in the cast iron pan just in the pot so everyone could eat at the same time this fabulous meal. Also what kind of plates/bowls are pressure cooking safe?

      Thank you so much! You can make it right in the inner pot and don't worry about putting it into the cast iron or any other dish. I've done it that way when I have company and it works great! Anything metal is pressure safe and some silicone. They say not to PC with glass because it can break.

    This looks yummy. Fyi it cooks faster on the outside because it's in a dome shape so it can come to pressure. That means the outside of the bottom of the pan gets warmer, therein cooking the outskirts faster.

    I just throw my bacon in the in the air fryer basket for 15 minutes and just toss it around every 5 minutes and it comes out perfect every time. There's no need to make things more complicated than necessary. My favorite restaurant just closed and they made the best bacon mushroom mac and cheese. I can't wait to try this recipe in my foodie.

      I just purchased the hot/cold blender from Ninja, so I'm going to try that out. I haven't made apple crisp, but I have made an apple crisp pie that is featured in my new cookbook. I may do a different apple crisp video down the road.

    Just tried your mac & cheese recipe. WOW👏👍👌 My wife & I agree that this is, without a doubt, the BEST mac & cheese we've ever had. (I doubled the recipe as I like to make enough that I can freeze some for future meals, esp. in the summer. Doubling it, I had no problems. I didn't have a small enough pot to do the cheese sauce (aka ROO? - not sure of spelling), so I made it on the stove. However, I've remedied that shortcoming via Amazon. REALLY like your sight so far. I agree with Beth H. re: how you provide options & answer questions. Keep the recipes coming!!!! I've just started to use my Ninja Foodi, so I'm very excited to see what else I can make with it. đŸ¶đŸ± (Our Westies & cats think the Ninja is cool too!)

    Hey Louise, you know I love you. I love bacon; I love mac & cheese; I love this recipe. Can I replace the flour with corn starch? It looks wonderful!!

      You could use a cornstarch slurry instead of the flour by mixing the milk and cornstarch together and then adding it to the cooked pasta. You will have to heat the mixture to get it to thicken, but it should work fine.

    @thesaltedpepper quick question just picked a random video to ask on, but I ordered the bamboo steamer. And the first top 2 tiers stick together very well I kind of have to pull them apart to get them apart. But the very bottom one doesnt stick to it at all. I go to pick it up, first 2 are together but bottom isnt attached. And I dont want that happening in the foodi unless it is meant to be like that. How do you lift it? Silicone bands?

      Mine is only a double layer and yes, I do use the silicone bands to lift it easily in and out of the Foodi.

    Great recipe! I noticed eggs in a pretty holder in the background. Do you leave your eggs out of the refrigerator?

      amkreationz they are fresh eggs from our chickens and you don’t have refrigerate them until you wash them.

    Literally JUST made this 20 minutes ago from the written recipe. I modified it to include tuna - my teen boys' favorite - and after the final mixing, just left it in the pot & broiled for 8 minutes. The pot is already empty. Also, I am loving the PIP cooking system and would appreciate knowing which small-serving products CAN be used during pressure cooking. So far I've only used my Grammie's Corning Ware, but don't want to push my luck with it. Are there any other glass/ceramic/stoneware that can be used? Thanks!

      It is not recommended to pressure cook with glass/ceramic/stoneware because there is a chance it could crack under pressure. Even canning jars will crack once in a while if they have hairline cracks that you can't see, but I do use them for desserts. I would get a few metal type of pans. The baking kit from Ninja has a good size casserole pan in it and I use the Fat Daddio pans the most. You can see many of the accessories I use in my Amazon store: amazon.com/shop/thesaltedpepper

    I love watching your video's. They are so informative. I just bought a Ninja Foodi and I've only used it one time to pressure cook some chicken. It worked incredibly well, and fast. And from what I have watched on CZcams alone; I haven't even scratched the surface of what this amazing appliance is capable of.
    So, I'm learning everything that I can about this WONDER of technology. Including (what I'm finding to be) an endless sea of recipe's.
    Now. Concerning your incredible Bacon, Mac & Cheese video in the Ninja Foodi....have you experimented with buttermilk in place of the half-n-half?

      Thank you and I hope you use the Ninja Foodi to its full potential, it's an amazing appliance! As far as the buttermilk goes, that is really a personal preference. I don't think I would like the flavor in mac and cheese, but you can certainly substitute it for the half and half for a tangier flavor.

      Yes, all my recipes can be made in the 8 qt Ninja Foodi. You would not change the cook time for half of a recipe. Happy New Year!

    I made this with my own a cheese blend, and the wife and son raved about it. I used Pyrex to finish it but I want to get the cast iron pans like in the video. Could you tell me what size pan you used?

    louise regarding the pressure test, a lady on the facebook page, Barbara Carney, took my head off for suggesting that some steam comes out before its fully pressurised, I told her that on your video you said its only a little and not a problem, but she was very irate with me and said that was rubbish and she was an expert.
    I have used mine twice now same thing, a little steam then it settles

      What FB group was this? You are correct, steam does come out before the pot is fully pressurized. Sometimes it's a lot and sometimes it's a little, but it always releases some steam in my experiences. Once enough steam is built, the pin will pop up. Even then, I've seen some steam come out. Steam can also release during pressure cooking if too much is built, then it releases out of the black valve. This is a safety thing. That is why the black valve is loose when sealed and it's weighted. The steam is what creates the pressure against the pin to pop it up and too much will overcome the weight of the valve and allow it to release steam, too. I hope it wasn't in one of my FB groups! Sorry that happened to you!

    I am in the uk. In the Mac n cheese recipe you mentioned adding ‘half and half’ (looked like milk). What exactly is this? I am not familiar with this term. I have just got my ninja foodi and want to try this recipe.

      half and half is a combination of milk and cream. You can make it by combining 3/4 cup of whole milk with 1/4 cup of heavy cream.

    Can I ask what the cup measurement is in ml please? It’s always so difficult to find the us cup to ml, the internet is currently telling me 4 different quantities in ml to us cup. They say 200ml, 236ml, 240ml and 250ml but looking at your measuring jug it looks more 275ml! Thanks in advance

    the reason the bacon or indeed anything you put close to the outside edge of the rack gets cooked more quickly is that the insert pan itself heats up...in fact when you are doing something like hard cooked eggs you should try to keep them away from the outside edge or the shells can actually get a bit burned.
