- I am going to be making miso marinated fish.
This is one of the popular Japanese restaurant staples and it is relatively expensive but you can make it at home with very easy prep.
The black cod is famous for this recipe, but I cannot access it at my local grocery store but I found a Greenland halibut, which is similar to the black cod, and it turned out pretty good!
And I will try to tuna and then fish and compare the difference.
2 (100g ) Greenland halibut
・Simple Miso Marinade
2 tbs one-day Miso or White miso
1 tbs Sake
※Add sugar or Mirin if you are using regular yellow miso.

@@kitchenprincessbamboo I’ve smoked salmon for years, I’ve tried smoking rockfish a few times but was never impressed with how it turned out. This recipe seems like it would make a good brine for smoked fish. The recipe has all the ingredients that can be used in a brine. The next time I get enough for a smoker full I’ll give it a try.

This looks like a great recipe. I'm going to try it with several different types of fish.
You mentioned you can freeze it at the marinating stage. Do I need to wait until it's marinated for 3 days before I freeze it or can I freeze it as soon as it's ready to go in the fridge?
I am so sorry for not answering the question. You can freeze it AFTER a day of marinating in the fridge. Thanks for the good question!
Would this work with salmon?
I think a fatty fish is best for this so yes
