Hello everyone! Welcome to the Chef Saito Channel!
This is another episode of Washoku tips where we teach you how to make Japanese dishes.
In this episode Chef Saito is showing us how to cook miso marinated Black cod.
In Japanese this is called Saikyo-yaki.
It is very popular in Kyoto.
Below are the ingredients.
It is very simple so please try at home.
2 - 3 fillets Black Cod
100g WHITE MISO OR SAIKYO MISO
30g MIRIN ( SWEET SAKE)
50g SAKE
30g SUGAR
1 clove GARLIC
10g GINGER
You can also make this with other fish such as Salmon, Grappa and King Fish.
Please try this with your favourite fish.

Thank you my friend. You can be creative and use other fish too. Salmon, Tuna maybe some flat fish. You can also do Chicken which is super nice too!
@@ChefSaito yes i did. And i just did a salmon skin version. Imagine a long salmon skin in a tape-like form, then rolled it up all the way to form a ball after removing the excess marinade. And jaaaaannngggg!! Lovely food served 🤩 and i just tagged you on instagram

How about cooking temperature?
Would love to see how to make peppered tuna sushi or some main dish that uses it...definitely need try the cod!

Hello chef i wld like to ask if you will bake the cod or broil. Thanks
baking in the oven will be good. if you want some colour you can finish it off with the broiler but not a must. Let me know how it goes!
I used alchol free sake, with Spanish Mackerel .

You don't need to. just cook it together with the fish. I'm coming out with another fish dish this week. hope you enjoy.
