DOUBLE DIPPED, ULTRA RICH AND FLAVORFUL BIRRIA RECIPE MADE TWO WAYS | TORTA AND TACOS| BIRRIA VIRGIN

    Ingredients:
    6lbs beef chuck roast
    Stock Mixture
    24 ounces white melty cheese (I used mozzarella, pepper Jack and Monterey Jack)
    Cilantro
    Red onion
    Corn tortillas
    Torta bread
    Stock mixture:
    5 Ancho peppers
    5 Pasilla peppers
    5 Arbol peppers
    5 Guajillo Peppers
    2 onions chopped
    3 Roma tomatoes
    3 packs beef bouillon
    1 head roasted Garlic
    1 tablespoon Mexican oregano
    1 tablespoon Cumin
    1 tablespoon Dried thyme
    2 teaspoons Minced ginger
    1/4 teaspoon Allspice
    1/4 cup white or apple cider vinegar
    1 cinnamon stick
    2-3 bay leaves
    2 stalks celery
    Salt to taste
    10 cups of water throughout process
    Directions:
    Remove seeds from peppers
    Cut and brown beef in skillet remover and sit in stock pot, to skillet flash fry peppers, remove then add chopped onions and sauté 2 mins then add tomatoes and peppers along with 3-4 cups of water and 2 packs of beef bouillon, simmer for 5 mins and then allow mixture to steep an additional 5 mins .. next blend mixture in blender until smooth and strain. Add sauce to stock pot with beef and simmer 2.5-3 hours
    Check pot after 1 hour and season to taste. I added 1 more beef bouillon packet, 1 teaspoon of salt, 1 teaspoon black pepper, 1 teaspoons garlic powder, 1.5 teaspoons of Tony Chachere creole seasoning and 2 cups of water continuously to simmer until beef is fork tender
    Once down , skim grease and remove meat. Shred beef in a bowl, add 1-2 cups of water to consume and season to taste if needed.
