Ingredients
For the Broth (make 4 servings)
3 to 4 oz pork fat
2 cups chicken stock
2 cups dashi stock (you can substitute with chicken stock) seonkyounglongest.com/japanese...
2 cups unsweetened soy milk, unsweetened cashew or unsweetened oat milk
For a Bowl of Ramen
1 portion fresh frozen or instant ramen noodles (for tonkotsu, I recommend thin noodles)
3 to 4 tbsp tsuyu or chashu tare
1 green onion, chopped
Handful beansprouts
Handful black fungus
1 to 2 slices of chashu
1/2 to 1 ramen egg
1 clove garlic, optional - Jak na to + styl

Hello, I've been really enjoying your recipes in the past few days. In the 80's I was a Sergeant in the Army stationed at Ft. Rucker AL. Back then, many of the GI's returning from Korea had Korean wives and I was a social young man just married. My wife and I had a lot of friends, visited other couples very often and often ate Korean food, which I loved. Additionally, there was a shopping mall on base that had a small kiosk that sold Korean made egg rolls. They were delicious and I've never forgotten them. They had a nice crispy outside, but weren't overcooked, especially the inside. The inside was cooked, but not to death the way every Chinese restaurant in the States cooks them. I've looked to find Korean egg rolls ever since and was ecstatic to see you have a recipe and how to video here in your channel. I forwarded my wife the video (I don't go in her kitchen and she doesn't mess with my grill or smoker.) to my wife and printed out the ingredients. I'm excited about trying Korean egg rolls once again and trying out recipes I recognize off of your channel. Best Regards, Dave

finally! a video for tonkotsu ramen! I have been waiting for this video for so long after watching many of your noodle soup videos! tonkotsu is my favorite noodle soup of all time, and I have been hoping that you would eventually show us how to make this dish! I have watched many other tonkotsu making videos and tried to replicate the dish but none of them turned out the way it tastes in restaurants. Now I know what the secret is, the soy milk! When my mom tasted tonkotsu ramen for the first time, she said that there must be soy milk in it, but I didn't believe her because none of the recipes I watched mentioned soy milk! no wonder! well, mom is always right, i will definitely try this recipe, you are one of my trusted chefs!

BTW, from someone who was married to a beautiful woman who lost her leg at age 17 (cancer) and used crutches for 30+ years, (when not wearing her artificial limb) you may want to raise up the crutch support just a tad, you should not be leaning down on to a crutch..... it works much easier and comfortably just barely under the armpit....
Agreed. I have to teach crutch training to patients, and you should avoid putting weight through your armpit! Too many important nerves and blood vessels running through. Instead you want to have it resting along your rib cage.

Ok I am SO so glad that you posted this video. I have been watching lots of these videos, yours and others, trying to figure out what makes the base of the soup so white and creamy and rich. Most of the time I hear that it is just soy milk. But I knew there was something else. One time at a restaurant I straight up asked them, and they had to translate what the chef said, and he said pork fat. So I was thinking lard. And I knew that couldn’t be right because that would’ve just made oil droplets on the top of the broth. Then you finally showed us that you take those chunks of actual pork fat, boil it and blend it up with stock, and then add the soy milk. My brain literally just exploded, thank you so much for this. Thumbs up of course, but I always do that at the beginning of all your videos anyway. You are the best! Get well soon!! Make those boys do the dishes and heavy lifting.
