I really didn't know what his background was, I said what I said based off of what someone else told me, I never personally watched his videos

Yup as a Japanese person I nod in approval lol this is what I do for my Tonkatsu too I like how you kneeded the noodles by standing on it that’s something my grandma taught me in order to create that chewy bouncy noodle texture well done this is by far one of the best Tonkotsu ramen videos I’ve come across

Yes absolute approval, kneeding the dough and then stepping on it. Essential when making Ramen and Udon noodles from scratch, gives it that extra QQ texture. Also your shorts make it look so much simpler than it is. The amount of cooking needed for that umami flavour

Idk if you’ve tried it but I saw this tip in a video on how to help peel boiled eggs ☺️ After cracking the shell take a spoon and get it under the shell+egg skin thing (lol) then scoop it around the egg, I wish I had heard of this earlier cause I struggle 😂😂
If you want the easiest peeling boiled eggs, try steaming it instead of boiling it. What you want is air to enter and separate the egg from its membrane and to get air through the porous shell, you steam it and not submerge it under water.
I was genuinely thinking “if you don’t make the ramen it’s not from scratch” as a joke.... and then you actually made the ramen. It looks delicious btw
Update on this comment, I was able to find pork bones at a Mexican Market near me, so if you cant find any at any other butcher, trying something like Vallarta or Cardenas might work.
