- Want something that is both festive and easy to serve a big crowd? Smörgåstårta or sandwich cake is the Swedish solution - at least in the summer. While the seafood version is a classic, you can make it however you like - with meat, vegetarian, vegan... Simply create one or a few delicious fillings, assemble with bread, and let your inner artist come out to decorate it.

Thank you for recipe ! I needed a recipe for an authentic smörgåstårta to make for a Scandinavian-themed Christmas dinner, and this one is exactly what I was looking for.

The historic recipes of sandwichcake/smörgåstårta that can be found all contained layers of both fish and red meat, all cakes up till the 70´ at least always did. Asparagus was also not a common ingredient, specially not green. Tinned, slim and white asparagus if ... But threat not, this smörgåstårta looks delicious, just wondering if the asparagus would be raw or cooked in the layer. The difference between a club sandwich and a smörgåstårta is that the latter is richly decorated on top and that the sides and top are covered in a "paste" of mayonnaise and sour cream or similar.
Except this one is far from authentic 😂

So little mayonnaise?? Raw fennel and asparagus are not Swedish ingredients, but plenty of mayonnaise and fish roe are mandatory in a smörgåstårta ! It comes across a bit like posting a recipe for Thanksgiving turkey stuffed with blueberries and lingon…

What are you on about? We fill it with what we want, I've had everything from a vegan smörgåstårta to a Mexican themed one.
Besides, fennel and asparagus are just as Swedish as mayonnaise.
