HOW TO COOK PERFECT OFADA SAUCE | OFADA STEW | DESIGNER STEW

  • This is the only Ofada Sauce recipe you're ever going to need. It's easy to make yet very flavorful and delicious. I hope you like it, give me a thumbs up if you do.
    You can use Offals also for this recipe and pretty much any kind of meats or fish you like, just chop them into small pieces.
    Ingredients
    1.5 Kg Assorted Meats
    5 Large Bell Peppers (Tatase or Paprika Peppers)
    10 Med Habanero/Scotch Bonnet Peppers
    2 Large Onions
    2 Cups Bleached Palm Oil
    3 Med Dried Hereing Fish (Eja Shawa)
    4 Hard Boiled Eggs
    3 Tbsp Locust Beans
    2 Tbsp Ground Crayfish
    3 Stock Cubes
    1/2 Tsp Salt

    Love this RED ofada. I'm trying this with local rice from kebbi. roast my pepper and onions in the oven at 180°C for 45mins to 50mins. This dries up the liquid in the peppers. I don't like straining out the water from blended peppers/tomatoes (me though).

    Hello, hope you’re doing well. This looks Yummy! Can’t wait to try this out 😋 I enjoy it with Yam and also Beans when there is no Agoyin sauce. Can you please do a video on how you bleach your oil (that’s if you don’t have one) and if you do please point us to the right direction 🙈 this has always been my issue with making Ofada sauce. Also, do you store the bleached oil and if you do how do you store them?

      I have a video on how to safely bleach your palm oil on my Instagram page, it’s about a year old so it will take some scrolling. I store the bleached oil in a mason jar just like the one in the video. I bleach quite a bit at a time so I always have it on hand when I need it.

      Honestly!!! I love Ofada, but bleaching palm oil is my biggest issue. The first time I ever tried it I saw fire 😂 Ever since, I've been too scared to bleach palm oil properly.

    1) can I replace the pepper with tomato
    2)if I am making the stew in large quantity should I add water
    3) adding of egg or eggs is it compulsory

    Please is it okay to use a little bit of ginger and garlic? Would you also recommend dried catfish instead of the herring? And what part did you use the liquid stock or did you end up not using it?
