- We are with author, chef and presenter John Gregory Smith as he makes the ultimate fish finger sarnie, inspired by his childhood and his travels.
A freezer staple, our Essential Waitrose line caught cod fillet pieces are coated in a light crisp crumb adding a subtle crunch to this ultimate sandwich. Serve with John’s umami mayo in soft white bread with little gem for freshness.

8 Essential Frozen Cod Fish Fingers
50g sun-dried tomatoes in oil, drained
1 tsp Cooks’ Ingredients Pomegranate Molasses
2 tsp Cooks’ Ingredients Pul Biber
100g Essential Mayonnaise
4 slice/s soft white farmhouse bread
1 baby gem lettuce, shredded
hot sauce, to serve

This is a really good recipe and I will try it to make it on the weekend. I would bring some pomegranate molasses from Iraq next month (I work there). I can source the rest of the ingredients locally. We don’t have Waitrose on this side of the world but I really appreciate the video and the recipe. Cheers

While this looks delicious as a big, unfussy sandwich, I’m tempted to make dainty little versions with the crust cut-off, and serve them for tea, simply so that I can call them “fish finger finger sandwiches”.
White processed bread (never brown), butter, economy fish fingers. Ketchup or tartar sauce or even (my fave) salad cream. All washed down with mug of builders tea. Try fish finger sarnie with a fried egg...yum.
Finally! The voice of reason... This guy has never had a fish finger butty in his life ......until now!
