Fish Finger Sandwich
Ingredients:
- 4 slices sourdough bread (toasted...)
- 8 fish fingers
- 6 tbsp tartare sauce
- 50g watercress
- 100g pickled red onions
Method:
1. To make the sandwich, toast the bread (or don't) and then add the tartare sauce to the bottom.
2. Next, add the fish fingers, then watercress, and finally pickled onions. Spread some more tartare sauce on the top slice, and you're good to go.
Tartare Sauce Ingredients:
- 200ml mayo
- 6 cornichons, diced
- 1 tbsp baby capers
- 1 shallot, finely diced
- small bunch dill, finely sliced
- zest of 1 lemon
Method:
1. Mix everything in a bowl, and you're good to go.
Pickled Onions Ingredients:
- 1 red onion, sliced thin
- 200ml water
- 200ml apple cider vinegar
- 1 tbsp salt
- 6 black peppercorns
- 3 cloves garlic, smashed
- 1 tbsp honey
Method:
1. Place everything, apart from the onions, into a pot and bring to a light simmer.
2. In a clean glass jar, add the onions and then pour over the hot pickling liquid.
3. Leave to cool, and it's good to go (tip: it's better if you make these the day before). Once at room temp, leave in the fridge, and they are good for weeks.
Fish Fingers Ingredients:
- 600g white fish, cut into 8 strips (halibut, cod, or haddock will also work great)
- 2 eggs, beaten
- 200g flour
- 200g panko breadcrumbs
- salt
- oil for frying (olive, peanut, or whatever oil you like to cook in)
Method:
1. To crumb the fish, simply season the fish with salt, then dust them in seasoned flour, then into the egg mixture, and finally into the panko breadcrumbs. Place them onto a plate with some panko on the bottom so they don't stick.
2. To cook them, add 0.5cm of oil to a frying pan and bring up to heat. Then fry the fish fingers for 3-4 minutes on both sides until golden brown and delicious.
3. Remove from the pan and season with salt.
the continuity of video here was lovely to get an actual sense of owen and andy's personalities.

@@rickmobbs4181anyone can cook pal, there is some home cooks better then most commis chefs today. I’ve been a chef for 13 years and you can have great cooks at home but being a chef is a different standard of cooking it’s a different ball game but make no mistake people can cook 😂

Andy, you have the BEST kitchen trashtalking abilities. It's cheeky, without being too pointed. Makes me nostalgic for some of the cooks I've worked with who shared a similar friendly banter. Racing to peel shrimp, eggs, etc. 😂

I think the fish sandwich needed a soft bun rather than chewy sourdough. But both sandwiches looked delicious!

@swisski8383 if it works it works, buns are definitely better for anything battered, fish/chicken burgers/sandwiches work better in a soft buttery bun

American fish stick is to the chicken nugget that is a fried chicken tenders are to fish fingers.
Andy is not extruding a slurry of fish and whatever fish biproduct and starch that is breaded and deep fried and frozen.
I enjoy fish sticks, but I know that I don't know what I am eating.

Loved this episode! I made a sort of version of Owen’s brekkie today (Saturday) but in addition to the grilled tomatoes and sautéed mushrooms I served up some garlic roasted potatoes, ham, baked beans, and sunny/easy over eggs. At least two people made sandwiches from their plate. For Sunday I’ll try Owen’s brekkie sarnie since I have plentiful quantities of those ingredients on hand (including a bunch of organic oregano). I’ll not salt the feta as mine is plenty salty already. For Andy’s recipe I’ll wait until later in the week to make the fishy fingers. I’ll make extra so as to have enough to make Nigella’s fish finger borta fir fishy Friday. I’m looking forward to those. Cheers! (Still having fun with your cookbook Andy, will you be in NYC for a signing?) btw, I miss fine watercress here in the U.S., particularly on my egg salad sandwiches. Now I just chop a bunch of watercress leaves to get the zing for my egg salad(and make a salad or sauté/steam the rest.) p.s. I think I prefer the fish fingers on un-toasted bread so that the bread squishes into the sandwich holding the insides (I like unseeded rye for this). If the bread was toasted the fishy fingers would fall out while trying to bite
