INGREDIENT LIST: ( 2 to 3 servings)
Cabbage (700g) - 1/2 of a medium size cabbage - 9 heaping cups shredded
2 medium tomato (300g) (1+1/4 cup blended tomatoes)
3 tablespoon olive oil
5 to 6 garlic cloves - 2 tablespoon chopped garlic
1/2 teaspoon chili flakes or to taste (Optional)
1 tablespoon coconut sugar OR palm sugar (to taste)
Salt to taste (I have added 1 teaspoon pink Himalayan salt)
1 cup green onion - chopped
lemon juice to taste ( I have added 1/2 tablespoon of lemon juice)
METHOD:
Chop the cabbage into ribbons and set it aside. Chop the tomatoes and blend them it to a smooth puree and finely chop the garlic.
Heat a pan on medium heat. Add the olive oil and chopped garlic. reduce the heat to low to prevent garlic from burning and right away add the chili flakes and fry it for a few more seconds. Add the blended tomatoes and coconut sugar and mix it well. Turn the heat back to medium and bring it to a rapid simmer and then cover and cook it for about 6 minutes on medium low heat. After 6 minutes, add the shredded cabbage and salt. Mix it well and then cover and cook for another 2 to 3 minutes or until the cabbage is slightly tender but still has a crunch to it.
Uncover, mix it well and turn off the heat. Add the chopped green onion and lemon juice and mix it thoroughly. Serve hot.
IMPORTANT TIPS:
- Use a deep pan or pot
- reduce the heat to low after adding the garlic, this will prevent it from burning
- if using a shallow pan, partially cover with a lid while cooking the tomato puree, to prevent it from splattering all over, hence no mess
- If you are using a young/tender cabbage cook it for 1 to 2 minutes, however if the cabbage you are using is tough then cook it for about 3 minutes or so
- Add lemon juice and salt to your liking

May I recommend you watch carefully how you respond to plant-based eating. I did that, sort of slid into eating more vegetarian, without really noticing. And kept getting sick. If I had a cut, it took forever to heal. I donât know how I came around, but when I started eating meat, again, all that went away. I also realized Iâd been really spicy. Not everyone can eat a plant-based diet successfully.
@@dawnjohnson8739 I can't say anything for adults changing diets, but people who start from the beginning live long lives with dairy added to plant based diet. With only plant based diet you may need to make up for too many nutrients, maybe some multivitamins fulfill.

Made the recipe this week. Made a double batch, but did not use any oil. Substituted with vegetable broth when sautĂ©ing the garlic. Came out great and was very tasty. Had it with a side of baked tofu and white rice. Thank you so much for the recipe and will be making this dish a few times per month. Canât wait to try some of your other recipes. :)

How do you make sweet cabbage?
@@ruchika5502 It's actually really simple. You chop some cabbage (usually one head) and one onion. Put it in a pot. Then add a little bit of tomato juice (passata), and add water. Put the lid on, let it boil and then simmer on low heat for as long as you like. Usually, the more you cook it, sweater it gets.
I usually put too much tomato đ but my grandma used to add just about 200 ml. You don't have to add too much water, because cabbage will wilt and shrink.
Seasonigs are optional. Usually just salt. Maybe bay leaf.
In my family this is eaten as a stew (it's more liquid), while in other parts of the country is more dense and usually eaten as a side dish. I like the both versions.

@@ruchika5502 It's from Croatia. In Zagreb region it is called "prisiljeno zelje" (forced cabbage đ ), while in Slavonia region it is called "slatki kupus" (sweet cabbage) or "kupus s paradajzom" (cabbage with tomatoes - very innovative, I know đ ).

Is there a substitute I can use for tomatoes? (allergic) Do you think a couple of roasted red pepper would work? This would serve well with a smoked tofu sandwich. This dish reminds me of a warm coleslaw but instead of vinegar you use lemon, you can probably do this with brussels sprouts too :-)
