Banana Coconut Muffin Recipe NO EGGS - versatile base can be used for all kinds of muffins!

- This no-egg muffin recipe is so versatile! It starts with ripe bananas. I added in shredded coconut, but you can add in whatever you want: diced peaches, apples, raisins, toasted chopped pecans, chocolate chips, you name it!
I wanted to keep the ingredients super simple so here's what I came up with:
2 - 3 ripe bananas
1/2 cup butter
2 cups self-rising flour
1/2 cup milk
~1 cup brown sugar (or white sugar, or white sugar + a spoonful of molasses), use more or less to taste
1 tsp vanilla
Dash of nutmeg (optional)
Dash of cinnamon (optional)
Mix ingredients then spoon batter into greased muffin tin for muffins or into a loaf pan if you want to make it into a sweet bread.

Here's how you can make self-rising flour from all purpose flour: For every cup of all purpose flour, add 1 1/2 teaspoons baking powder and 1/4 teaspoon table salt.

Eggs have gotten to the point where I've swapped out my usual 'egg and toast' breakfast for oatmeal most mornings. This is a great eggless recipe as well as a fantastic way to use up bananas! I always seem to have some lying around on my counter or in my freezer.
NO KIDDING! I use eggs for so many things, but boy, I've been making do with other choices, as well. I wish we could have chickens where we live because I totally would have some hens, but sadly, they aren't allowed here in our town. 🙁

I usually always have ripe bananas,,,,,,Heck, I don't even have any as of now. They will be on my list for the grocery store tomorrow. Good info for egg replacement....just remember, bananas are high in sugar content.
Very true about bananas being high in sugar! Banana bread - whether this recipe, or a more traditional recipe - is definitely my go-to when I have ripe bananas on hand. Sometimes I peel and freeze them to use later.

Over the past months I have heard a lot about your egg prices in the US going up and up... do you know why?
In Australia the egg prices as far as I can see are and have been stable. Egg prices vary depending on the type of egg, (caged, free range, organic) and the size of the egg. Of course, I always purchase free range or organic and the prices per dozen can be around AUD$7.00 plus. The caged eggs are cheaper, but I tend to avoid purchasing them as I don't like the thought of the poor chooks being confined in a small space.

Hi Gloria! Apparently, the egg prices here - at least they say - are due to avian flu. I don't know if that's true. I've come to not trust the authorities for much at all these days.
