    I just had to leave a review after making this last night before I went to bed....I used a .50 walmart cup, bamboo stick and clothes pin/clip. I woke up and came to the kitchen to check it out and OMG, it's the biggest rock candy i've ever seen! AMAzing! thank you!!! This works!!!

    If you rotate this string or stick on which you want to crystalize - back and forth, it will make crystals faster and bigger. Reason is that during crystal process, "depleted"water sitting near the crystal, and tend to dissolve it back. By rotating, you moving your crystals through new saturated area, while depleted water (under-saturated) tends to go away.

      +Bottle flipper yours probably had a really nice Crystal structure though. Slower growth tends to produce a sharper product :)

    I needed to find a better way to make sugar clusters for a geode cake. This is exactly what I was looking for and will be trying it out tonight. And thank you for the explanation as well! So much easier to do when you understand why something is happening!

    So recipe is:
    4 cups sugar
    1 cup water
    Canning jar
    Candy thermometer
    String and bridge
    Boil to 230F stirring constantly
    Cool to 220F then add whatever flavorings or colors
    Pore in jar and attach the string and bridge
    Wait 4+ hours depending on size?
    What would happen if I place the jar outside in the cold? Will it crystallize faster?
    Oh right, the temperatures are 110 down to 104 for countries that weren't first on the moon.

    Thank you so much! So many recipes just say to put as much sugar in boiling water as you can, but I've been wondering what candy stage makes the most optimal crystal growth. With this, I saw the sugar crystals I sprinkled in bonding together into little sugar threads within less than 20 minutes.

    You could pour the excess syrup into a sprayed ice cube tray to create sugar cubes.
    For, whatever reason you would want them, like add a stick and make suckers.
    Always wanted to give making candy a try. Absolutely must do this someday.

      If you would use an ice cube tray to save the extras, I thought of an important tip since my original comment. Make sure the sugar is decently cooled down (basically, the point where it can't cause blisters if touched), else it might negatively affect the plastic. It becomes almost tar or syrup like at that point, but can be pushed into a form (like an ice cube tray) with little effort, just like hot glue or thick dough. Gently greasing the tray with a tiny hint of oil may help in releasing them from the mold.

      KarascioM Indeed you can so long as you heat it to the same temp, you should be able to grow new ones without a problem. Though you might have to add more water initially to get the sugar to redissolve.

    Hello thank you very much for the great video
    I tried it yesterday but I only used 3 and a half cups of sugar ( I was afraid I would't control the freezing process if I use alot of sugar )
    after 4 hours I got nothing on my stick, I was like yeah it probably didnt work.. but today when I woke up, a beautiful rock candy was formed I'm so proud , I'll do it again using different colours

    I'm noticing the crystal sizes are tiny. I use a 1 to 4 ratio, and use evaporation. I get larger crystals but it takes quite some time to grow.

      karim merchant You can redissolve it with new water and new heat to reuse it to grow more crystals.

    I LOVE LOVE LOVE this demo! I have read the slower it cools the bigger the crystals will be?! Can you do a video and show this process, would you use a heating pad? Or oven? I'm really interested in what other ways this can be done. Can you cool it fast in the fridge and get better results? There's not one video I haven't seen on rock candy and I keep coming back to yours! Thanks so much!!!! I would love to see more videos on this and other ways to grow this!!!! Your awesome!!!

      Cooling it slower will give you larger crystals because it slowly builds off the existing crystals instead of branching off into many tiny crystals like in this video. I have a sugar solution that had been in the fridge for half a year and it has large blocky crystals.

    The crystal is really big especially for 4 hours I whould put it in a bhcket it would get huge or in a swimming pool that hasn't been use and sell them for 1 thousand dollars

    Thanks. I tried making and I most likely over heated it NOT a success I later added water to the hard stuff and used in my coffee as it resolved I don't know how it would stick to rubber ice cube trays but wouldn't it be ok to also cool in a Dixie cup then turn upside down to thaw a bit and pop out to go in baked beans or ice tea? Again thanks

      Umm depends silicon trays would have no issue but certain rubbers or plastics could melt or lose their shape at these temps. Also are you talking about plastic or wax coated paper dixie cups?

    I was trying to help my son but it started to crystallize on the side of the quart jar before it was even an hour yet. what do you think went wrong?

      +5Smarties It's possible that Crystals might of formed on the side of the pot you were making the solution in. Those crystals then could of fallen into said solution and triggered it to start Crystallizing prematurely.
      That would be my guess.

    What would happen if I put the syrup solution on a baking sheet instead? Low long should it take to cool to become solid so I can peel it (carefully ) into a large rectangular sheet of sugar?

      You would want to cook it till the hardball stage. That is pretty much how they make sugar glass or hard candies :)

    Could you make more candy with the left over syrup? Would you drop a new string in or would you have to reheat the solution back to 230? Great video thanks. My daughter wants a geo cake for her birthday. So that's where the rock candy comes in.

    I like the addition of the vanilla flavoring and was just wondering if you could use lemon juice? I am a lemon fanatic and would love to make lemon candy.

      Yes you can but as a fore warning adding too much can stop the Sugar from crystallizing. My personal theory for this is a because the acid in the lemon juice causes the Sucrose the sugar is made up of to instead 'Invert' and break down into Fructose and Glucose which doesn't like to crystallize. Especially when mixed with one another.

      Aisha Khan, in theory yes. You'll want seed crystals aroun the edges though.

      You can let it cool a bit, but wait too long and it'll start forming crystals in your pot and you'll lose the opportunity to grow them as fast. (Most growing occurs in the first 30 minutes.)

    Questions.....can you remelt left over product. And once your treats are made can you freeze them for later....like months in advance.....for instance...i wanna make for a birthday party but i dont wanna make 2 to 3 weeks ahead of time and try to time them so there ready for a party. Also can multiple treats be made in one container. ....thanks

      Yes to all, the Left overs can be remelted with some additional water. And these will stay indefinitely without refrigeration needed. So long as they are kept dry and out of a humid environments.
      Best way to achieve this is to seal them in a bag with food grade desiccant packs. Lastly yes multiples can be made at once, although they may grow at different rates.

    This is helpful!! Only mine clumped up along the sides and got hard right away only on the sides and was really wet and sloppy in the middle and sort of formed a geode. It wasnt the right shade of green after drying which is from the sugar being white. But the result was too soft or too hard? Idk. It's not shiney and very dull.

    At least your spoon has a covering, (not bare metal), so I'm sure helped with heat?
    Might I suggest you or anyone dealing with sugar syrup in any candy making?
