Yet this step was never included in any of the techniques given to me in school and I never knew why I couldn't get it to grow. Thank you. All steps had everything from dunking repeatedly until it started to grow to keeping it in the dark covered up. This makes a lot more sense.

I think you can. I saw a recipie that said you can rebook the liquid and add more sugar if it does not work out the first time. I moved mine around and added extra later so I might have to redo it, cause it was starting to set till I messed around with it.
When I did it a while back, I knew I would need something to hold me over. I had several glasses and made about 12 rock candies. I ate one every couple days and it was fun to watch them grow, the longer you leave them, the bigger they'll grow!

Yep. I'm not sure if I'm exactly correct on this, but rock candy actually uses a thing that chemists call "crystallization." Basically, when you increase the temperature of water, it increases the solubility of the water, allowing more sugar to be added. However, when it cools, the solubility of the water decreases, and so some sugar molecules cannot remain mixed with the water molecules, and they separate. This separation causes the sugar molecules to "crystalize" and stick to the surface of the stick. So that's why it has to be grown.
I work with kids, and I'm wondering; what's a good way to keep dust from gathering on the tops of the glasses, if you're waiting a few weeks(we have problems with dust sometimes)
melly kidd I would gently cover around the top with plastic wrap, letting it drape down the sides a bit. After the containers cool first of course. I would think that should keep dust out.

Raquel Miranda If you want it to grow bigger you just boil another batch of sugar solution above and place your already made rock sugar stick in a bigger cup. I'm gonna make mine the size of my fist!
You should first dip the stick in the hot water / sugar solution, then roll it in sugar and let it cool first before you place it back into the jar with the water / sugar mixture
+Jolene Lee she used shot glasses, just get a longer stick with a full glass cup. So you have more of the mixture at a taller height. Same simple process except bigger tools.

Growing up with would go to this seafood restaurant where dad would get drink his old fashioned cocktails that had rock candy used as stirrers.
