Eromba | Mashed Potato, Bamboo Shoots and Dried Fish Chutney

    Eromba is a generic name of chutney prepared with a combination of mashed up boiled vegetable and fermented fish along with some bamboo shoots. This dish features commonly on the platters of the Meitei people of Manipur.
    This simple chutney can be made in many different ways and I have made it with mashed potatoes, bamboo shoots and fermented fish as the main ingredients.
    This dish goes really well as a side with meals.

      fermented one, usage of fresh one is rare in northeastern cooking.

    Maybe I will tried it using fermented shrimp for I am a Filipino...cause...I don’t think we have fermented fish.

      Yes it can be used (smashed or sliced but cooked), garnish with cilantro and instead of normal chilli use u-morok or bhut jolokia for more heat

    What is the difference between fermented and dried fish? They look the same.

      Dried fish are normally sun dried out in the open. They are hard and quite stiff. Fermented fish though in appearance look like dried fish, they are very soft and pasty. They tend to disintegrate while cooking. The are made by fermenting them inside mud pots or the hollow tubes of bamboo. Yes they look the same though.

    Usually we steam the ngari and chillies together. Or roast the ngari if we want its smoky flavour. Btw, you can make eromba with any vegetables the same way.

      f..k... i tried this recipe be4 reading this coments! n i waste my last soiboom(tuaithur as we mizo calls it). The ngari smels(the raw smell) had taken over the soiboum smell n i loved the soiboum smell. This recipe is great but its not best 4 me..

      she's putting fermented nakham(dry fish). I'm also from Manipur and my gf is from Tura so i know that nakham and ngari are just the same

      You can prepare eromba without ngari too, for vegetarians. Just fry chilli (usually the red dried ones) in hot oil and take them out when their color turn slightly burnt (dont burn them though). And fry sliced onions too the same way till they turn brown. Mash them with the other ingredients and add little water. Mix them properly. There you go vegetarian style eromba.

    Appreciate the effort and the purpose. But your recipe is not the authentic one .Before telling what s missing let me tell you how to pronounce soibum-it should be pronounced as Soi- Boom Not Bum.Coming on to the fish .the one you used is called Fabou.In eromba it is ngari which is used. The taste is completely different if you use ngari . Nevertheless good job and keep it up.
