Sri lankan cooking is no different frim Filipino cooking.. its just that we dont usually use often curry powder and turmeric powder but we usually always use tgick coconut milk and we dont use too much shallots or onions.. it causes BODY ODOR

We make regularly Bombo dishes but the blossom one we use to make.
Check out all asian dishes that has bamboo in it. It's a staple and it's delicious too. Soft like bread but it tastes like a peanut or an almond. You can even make deserts with it. Like coconut being the tree of life, bamboo is the tree of livelihood.

I love bamboo shoots and have loads in my garden, I was advised by a friend from the far east how to ready them for cooking as they can taste bitter.. I actually hated it the first time I tried cooking it as I didnt know the traditional method..
Cut the raw bamboo in large pieces, wash rice and boil bamboo shoots in this rice water, salt, 4 or 5 red chillies and a tablespoon or two of sugar.. Once boiled let the shoots cool in the water, drain it, then slice and prepare in whatever recipe you like ..
The water would have absorbed all or most if the bitterness..

In the Philippines we shred the bamboo shoots fine and cooked it in coconut milk with jute leaves. Fresh coconut milk is a lot tastier than coconut milk in the can.
