Eat Your Kappa is a channel that offers you a sneak peak into the not so mainstream and largely undiscovered Northeast Indian recipes and helps you discover NE tribal food culture and everything nice.
About me:
I am Nambie, and I grew up in Shillong. I moved out of Shillong to Madras for higher studies and then settled there for work. When the fascination of the new place wore off, I realized that even though I love masala dosa, biryani and the oh so awesome! filter kaapi, I longed and craved for northeastern food that I grew up eating. Here's my attempt to bring authentic Northeastern food, culture and everything nice to those of you who are in similar situation. Cheers!

Egg curry northeastern style with MAGGI Masala-ae-Magic
Welcome to our Northeast Indian kitchen! Today, we're making a mouth watering Egg and Tomatoes Curry using MAGGI Magic Ae Masala! This recipe is quick, simple, and packed with flavours that will leave you wanting more. Perfect for a hearty meal, this dish combines the richness of eggs with the tangy goodness of tomatoes, all enhanced by the magical taste of MAGGI Magic Ae Masala.
Ingredients:
4 eggs
3 ripe tomatoes
1 onion
2 green chilies
1 tablespoon MAGGI Magic Ae Masala
1 teaspoon turmeric powder
1 teaspoon red chili powder
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons oil
Steps:
Boil the eggs, peel, and set aside.
Heat oil in a pan and sauté chopped onions until golden brown.
Add green chilies and tomatoes, cooking until the tomatoes are soft.
Mix in turmeric powder, red chili powder, and salt.
Stir in MAGGI Magic Ae Masala and cook for a few more minutes.
Add the boiled eggs to the curry and simmer for 5 minutes.
Garnish with fresh coriander leaves and serve hot with rice or roti.

How to store it?
Fresh one you need to finish them as soon as possible, if you want to store them for a long time. Sun dry them.

How long does it have a shelf life at normal room temperatures? Are there any traditional methods to extend the shelf life?
It is ash with very high lye content. It will last very long for years too, provided you keep it away from dampness and use clean dry spoon.

question : is it really beer or wine? i feel like its wine . also i hope it isnt something like vodka or rum because than if done any mistakes it can cause blindness.but regardless , pls answer my above question.
It is not distilled alcohol. It is just a fermented beverage. The pale yellow liquid which collects in the centre is called rice wine. The milk white one which is obtained after 1st and 2nd wash is mildly alcoholic and that is called rice beer. What you are worried about is distilled alcohol similar to arrack. No this one is not that.
