    A tangy eggless lemon curd filling is layered on a cookie crust and garnished with whipped cream, sliced lemons and berries to make this tart the star of any show.

    Ingredients:
    Eggless Lemon Curd
    Lemon Zest - 2 tbsp
    Fresh Lemon Juice - 100 ml
    Sugar - 100 gms
    Corn flour - 2 tbsp
    Water - 2 tbsp
    Butter - 100 gms
    Condensed Milk - 100 gms
    Lemon Yellow Color - a pinch
    Whipped Cream - 50 gms
    Chocolate - a small cube
    Fruits or berries for garnishing
    Tarts :
    Digestive Biscuits - 200 gms
    Walnut Kernels - 50 gms
    Salted Butter - 100 gms
    Recipe :
    1. To prepare the tart crust, blend digestive cookies and walnuts into fine crumbs.
    2. Transfer these crumbs in a big bowl and add melted butter to it. Mix both the ingredients well.
    3. Take a tart mold or any flat bottom plate and put the crumbs mixture to it. Press the mixture to the bottom and around edges and refrigerate it for 60 minutes.
    4. In a saucepan add butter, lemon juice, lemon zest and sugar. Cook it on low flame till sugar dissolves.
    5. Mix corn flour and water and prepare corn flour slurry. Add this to the saucepan with continuous stirring and cook it on low flame for 3 to 4 minutes until it thickened.
    6. Switch off the gas and add condensed milk , mix it well.
    7. Lemon curd is ready, if it is not smooth strain it while it's hot. Cover it with cling wrap and let it cool down.
    8. After one hour of refrigeration, remove cling wrap from tarts and carefully demold them.
    9. Fill tarts with lemon curd. Top them with some whipped cream, chocolate and lemon zest. You can also add fresh fruit or dried berries.
    10. Fill the lemon card in a sterilized airtight container and store it for 1 month in refrigeration and up to 4 months in a deep freezer.
