I replace screws one by one when they get bent too much or break. Amazon has them. M3-0.5×10mm hex socket head cap 12.9 grade allow steel. And the nut to secure M3-0.5mm carbon steel. Pretty cheap, and either way, it seems I replace the actual Pedals once a year because I ride 2,500-3,000 a year.

A crescent wrench on a tap?!?! With how much money is in your bike, you can afford a tap & die kit that has a proper handle for the taps that allows equal pressure on the tap. Also, I hope you used a threadlocker on the helicoils and let it completely dry before torquing the mounting bolts.

i am riding a schwinn from walmart. when you went to upgrade did you upgrade the schwinn or did you just start over?

Personaly i dont like to replace pedals. If i brake a few bikes? The pedals are transfered. Its like having a manual car. Selling it , but keeping the shifter nob from your old manual car to in the new car.
