I bet the house smelled amazing!! This might be a helpful tip when using dry yeast. I put it in a cup and add warm water to activate it. I leave it alone for just a few minutes then add it. It seems to help the dough rise better. I love hearing little one in the background. She's already a talker! The easiest and best bread I ever did and still make is in a clay cooking pot. Just got metric values. I use 25 gram fresh yeast dissolve in 520mL warm water. 400gram wheat flour, 200 gram rye flour, 50gram whole wheat, 100 gram spelled flour. 3 table spoon salt, 1 table spoon sugar. Mix everything. Cover for 1,5-2 hours. Fold and press the dough roughly ten times on a flour sprinkled surface. Put some flour in the clay pot. Put in the cold oven, set to 240 degree C for 60 minutes. Can be modified with more flour for a more white bread. The clay pot is acting like a stone oven, the crust is amazing, when it is out of the oven it is great. Just get it out of the pot directly. If leaving in it is getting a bit damp. Wrap in a towel for storage, after cooling down. It sure looks like you got excellent results !! Many years ago I had a friend bring me what she called an Amish friendship bread starter. I remember a 10 day process of tending to it and then making a loaf of sourdough-like bread. You could then start a new 10 day process with the starter you had left over or place it in the refrigerator if you didn't want to make another loaf at the end of 10 days. I think I kept it up for a couple of years often sharing some of my starter with other friends. It improves in flavor the longer you have it. I had forgotten all about it until I saw your video. You really should get into regular bread-making if you have the time. You did really well here.

I did my share of driving in that stuff when I lived in nc. Even sunny Florida is not so sunny this year and it's to cold for me. Stay safe and warm. Make snow creme. My kiddos loved doing that.
