    I have previously enjoyed this Chinese dish and was very happy to find your recipe online so I can prepare it myself. Just a couple of questions on your recipe. Do I do a 'natural' release after the 30 minutes on high on the Instant Pot? Also, I have always eaten this with a ginger scallion oil. What is the condensed/thickened sauce used for after final cooking? Am I using this sauce as a condiment for the beef similar to the ginger scallion oil or is this sauce simply discarded after the beef is cooked? Finally, is the pinyin for this beef 'jiàng niúròu"? Thanks for such an interesting channel with genuine (non-Westernized) Chinese recipes. Regards, Bill

      Hi Bill @thislucky1, thanks for your comments! Here are a few tips: I’d recommend reducing the pressure cooking time to 25 minutes with a natural release. Ginger scallion oil is fantastic as a dipping sauce. Regarding the thickened sauce, you’re right-it works well as a dipping sauce. If the beef is salty enough for you, you can freeze the sauce and use it to braise eggs, chicken, or pork. In Chinese, we call it "Lao Tang," which means special stock. One of my favorite ways to use it is to refrigerate it for a few hours until it turns into a flavorful jelly. It’s great with the scallion sauce too 🙂. And you got the pinyin spot on!     The only time I tried fried eggplant was when my cousin's italian grandmother made me some as a little kid. I was a picky eater back then, but it was really good. This recipe looks delicious.

    About how long does it generally take for the pears to wrinkle in the water at the end? Just wondering an estimate, can I walk away for a bit or do I need to watch it closely?

    Hand breaking the cabbage is something I'll absolutely try. If I put one Szechuan peppercorn into my dish it'll be too hot, LOL. I could never handle heat like that.

      Asian grocery stores typically have it, like H Mart or Lotte Plaza. Hope you find one near by. Otherwise, you could try apple pears, which both safe way and target have from time to time.

    Thank you for the video . Question , I saw a historical drama where they made duck fat sesame flat bread . If I want to make that using your recipe do I add the duck fat during the frying process or in the paste ?

      That is an interesting question. I actually have never tried duck fat before. I would try melt the fat and use the oil to make the paste. Let me know how it goes!

    Excellent recipe! Just made it. For those making this, the shrimp go in shortly before the slurry goes in. You can see them floating in the pot as she’s stirring. Highly recommend everyone try this.
