I have been getting Mai's produce for some time at the Hickory farmer's market. I love that she is always introducing me to new vegetables and herbs to try. The produce is fresh and always great tasting. It's so exiting to visit her booth and see what's new. She's also great at suggesting how to cook what you purchase. 😀

Chef Alyssa's Kitchen is such a cool place. While interviewing Alyssa it was so abundantly clear how important teaching is to her, how local food is fundamental to her operations and that she has a very giving spirit! I am biased, but this one was awesome!

What an amazing restaurant. 300 East is a place I was comfortable bringing my parents who don't have the most amazing palette, where I knew I would get amazing food, sourced and prepared the way it was suppose to, and for my parents it wouldn't be over the top and uncomfortable for them.There is something special about this place, if you're in Charlotte and you have never been, get yourself over there!
It is crazy to me that they grow an acre of flowers! I would love to hear the difference between the perennials and annuals and how that plays into the end bouquet!

I don't get something straigt. Why using plastic foil for growing? There must me kg of waste every week. This is envrionmentally horrific and the plastic softener is diffunding into the mushroom, right?

One of the best things about living in the Carolinas are local farms and being able to have fresh produce all year long. I definitely appreciate the extension of strawberry season! I look forward to making frequent trips to another SC family farm for u-pick every year, so a little surprised about the comment that it's more for entertainment. #supportlocal

I don't live too far from this place. I'm always finding cool small scale farming operations. I wish there was a hub that could connect me to more places like this instead of randomly finding them on youtube. I know I could go to farmer's markets but the 2 closest to me are an hour away, both in opposite directions.

Psychedelics definitely has potential to deal with health issues like anxiety and depression , I would like to try them but it's hard to source them here,

Hiram’s shiitake logs seem manufactured are they compressed sawdust or have they just been eaten away be the shiitake mycelium?

How much area is needed for 700 pounds of mushrooms
Hiram had three different shipping containers in use
And another cost saver would be to erect a pole barn to give your shipping containers shade... You will save tremendously in your heat coefficient trade off..... Lot of surface area you have to keep cool... Also, the excess Co2 your mushrooms are "exhaling" make a great turbo booster if you pump/recirculate to "Tents" next door for tomatoes and/or bell peppers..... And those only need a pvc pipe "frame" and 'black' bisquene sheeting..... Each sheeting will last 2-3 years, depending on your conservation techniques and the cost is minimal in comparison to 3 - 4k ea. purchase price for the conex you use..... The organic market is year around, but, you can always take a break in the summer when it comes time to sterilize your piping......

Perhaps consider hydroponic tomatoes.... The end results are extremely satisfying.... You have never tasted such a delicious tomato I can guarantee.... And it is a very stable market.... Especially in the Fall to beginning of spring time.... Market timing and quality is everything, as well as a select clientele list which you have already built.... Greatest of success to you..... Oh, and bell peppers is another really good supplemental sideline..... Very manageable on a micro basis.....

Oh man, i remember the days of going to forest to collect these with my family. Those were great times. Its crazy how these mushrooms can be just grown in a lab like this. Respect.
