I'm a former Executive Chef who quit my job to start a farm in my suburban backyard in Knoxville Tennessee.
I started gardening in my backyard to grow food to cook in my home kitchen for my wife and I. It didn't take long before I had way more produce than we could consume. So I started bringing coolers full of my produce to my job and selling it to the other employee's. I started selling to restaurants, and in May of 2022 I went to my first farmers market. After my second farmers market I quit my job and haven't looked back since.
Chef’s Harvest Farm is a profitable, No-till Urban Farm Which uses Organic practice. I specialize in high-quality salad mix and root vegetables. As well as seasonal vegetables such as Cherry Tomatoes, European Cucumbers, Herbs, Hardneck Garlic, and Ginger.

Hopefully not a stupid question but do you try to fill your orders with the restaurants and then take what you have left to the farmers market?
@@brianmb that is absolutely my goal! I would rather call out of the farmers market because I sold too much to restaurants, rather than purposely try and hold stuff for the market then not sell it. Farmers markets are very unpredictable…

Dewit 3.2 oz. I typically just get whichever Johnnys or farmers friend is selling. Sometimes they carry different brands I think.

Tomatoes that aren't vine ripened taste the best. This is why supermarket produce is superior to fresh vine ripened produce.

Just found your channel, I am really enjoying the info and advice as I have a similar situation. I formarly owned my own restaurant and just didn't enjoy it any more / burnt out from opening right before Covid. I am currently working on a Horticulture degree and interning on a farm with hopes of opening a flower/market no till organic farm in the future.

So you give the land owner the produce with the shortest shelf life, your leftovers, instead of the prime fresh picked stuff.
Heck yeah 🙌 win win for everyone! He loves it 💪 I even pay my chiropractor with veggies left from the market! Markets on Saturday and I’m usually at his place on Mondays. We typically harvest for the market on Wednesdays through Friday. Shelf life on my salad greens is typically 3-4 weeks. So hardly a disappointment! Sounds like you’re misunderstanding how great of a system it is for everyone! Just because something is leftover from the market doesn’t make it bad… I bring a refrigerated trailer to the market so everything stays cold. Helps me to move any left overs! And keeps him happy as could be! Thanks for watching 🙏

How do you keep your greens from getting bitter?
I use shade cloth, overhead watering during the hottest parts of the day. And I grow heat tolerant varieties. Muir from Johnny’s is the best for summer lettuce! Tastes like romaine 🙌. It takes a lot of knowledge and practice!

@@Northstar2 awesome! It has everything to do with selecting the right seeds honestly. Varieties that I’m growing this summer: Muir, Cherokee, magenta, and intercut, all from Johnny’s. Then I generally grow salanova also.

you can put the air conditioning unit outside the tent and vent the cool air output into the tent through one of the side vents in the tent, itll allow you to get the tent cooler, you might have to do a bit of creative ducting though.

I'd love to hear more about where/how you source compost and what kind of compost you are using. I have a real hard time finding quality compost in my area.
Yes! All compost is not created equal. I’m fortunate that I can get high quality manure based mushroom compost cheap. $500/20 yard load delivered. But moving forward I’m hoping to move more towards cover crops on this property. Because it’s a pain to get compost back there….

There was. A young lady several booths down from me at the market was growing there but she quit. And moved away. She had not taken good care of anything. Still working on cleaning it up. It’s about 60ft X 50ft .

Kinda wherever I can find what I’m looking for. I think I got the peas and oats mixed from Johnny’s. And mustard from Trueleaf.
