The truth of the matter is that turning a car safely should be your priority, but making those right and left hand turns smoothly should also be one of your goals. Why is it that when you make huge turns the car and steering wheel jerks back into place? I think it depends on the car on how smoothly it goes back straight after making turn.

Quick question. Do you really have to release the wheel after your done with your turn.

release it smoothly. don't let go of the wheel or else the car will "jolt" back to its normal position. keep your hands on the wheel at all times.

Ok the only thing for you new drivers is you shouldnt completely take your hands off the wheel while its returning straight like he does in the lot. Lol that might raise an eyebrow from your driving test person
