    I can't tell you enough how much I appreciate your recipes. I now regularly use paprika and smoked paprika. I know how to use beans in ways I'd never before imagined. I still haven't taken the step to buy the expensive saffron, but in these days of meat becoming so expensive and harder to get, I have really enjoyed learning about lentils, garbanzos, and various other kinds. THANK you so much for these videos.

      @@miked3168 tastes awesome tho especially if you get good quality smoked paprika and hot smoked paprika. Simple, tasty and healthy. Dont have to use those recepies every day.. 2-3 times a week maybe to have some variety. Awesome channel anyway.

      @@miked3168 Oh not they do not all taste the same. Sure Paprika is a staple in Spanish food and adds flavour but his recipes are great and varied as are the flavours.

    Pinto beans and rice is a dish that sustained my family for many generations. Most native Texans eat beans and rice at least twice a week (three times a week if you are from East Texas near the rice fields near the Gulf). This dish was always cooked on Monday as that was "wash day", and the women would be washing clothes outside most of the day, beans and rice was a meal that did not need to be looked after as much as other dishes. Also, the saffron was not used as it is a very expensive ingredient even today. Growing up, my mom used Turmeric as I do today. My favorite dish of all time!!!

      Vegan food is never dull! So many fruits, vegetables, pulses, legumes, nuts,seeds, herbs and spices to make an incredible amount of variations from all around the world! From Asia to the Caribbean and Europe in between, and so much more variety than any dead animal dishes and much better for animals, the planet and health!

    This was really good! My daughter came in who is 6 and said what smells so good. So I gave her a bowl of it and she ate it all , and usually she only eats her meals partially and says she is full and then asks for ice cream . Great recipe.

    Found this on Google feed for smart phone. Love the subtle flavors! Have to admit that I made my beans from scratch in crockpot then finished adding your ingredients in pan as instructed. So good it's hard not to eat more than I should in one sitting. ⭐⭐⭐⭐⭐

    Made this tonight, using black instead of pinto beans and added fresh spinach at the end. I can see this working with a lot of different vegetables, depending on the season and what's in the fridge. Mushrooms, broccoli florets, leek etc etc. Even tomatoes if you adjust the liquid added to the beans. This recipe is definitely a go-to. I'm still full! Next, I'm going to try the paprika biscuits!

    This looks so delicious! I eat a lot of pinto beans but only Mexican style. I've always wanted to try Spanish food, aside from some paella I had many years ago and with your recipes I can now make it myself.       Yes, for the most part. He’s a pescatarian. I’m not vegetarian and like my poultry and meat, but this is a wonderful channel. You can add animal proteins to many of the dishes if you wish. Or make them as is for a meatless meal or a side dish. They are delicious!

    Fantastic as usual Albert! A thought just hit us. You know how you use reference to your home made vegetable stock to use as an base option in a lot of your recipes. How about making an episode with homemade base options for the garbanzo and pinto beans you periodically use as an alternative to the store bought ones with the Calcium Sodium EDTA and metabisulfite. People probably do this on their own though maybe!! Love your format and your presence and personality. You are our celebrities instead of television and movies! Cheers!!

    We hope to move into our house soon. It has a nice gas range and I plan to saute garlic and other favorites in extra-virgin olive oil. Do you have a video or suggestion about how long I can heat the oil and at what temperature so it doesn't burn? Mil gracias.

      One of my fave recipes is like a veg pilaf with zucchini, mushroom and buckwheat, I’ve put tofu in the side but I’m sure you could make it together

      Yes I also fry different vegetables and then add soaked (not boiled) buckwheat and fry together adding spices. Or you can make buckwheat patties - soaked buckwheat (washed buckwheat pour over with boiling water and leave covered for 2-3 hours, will be like boiled and even more healthy than boiled) drain well, add chopped in small pieces onion, a bit of garlic, grated carrot, chopped parsley and dill, I also add grated zucchini (just dry before with paper towel), add salt and pepper and 1-2 eggs. Mix very well and fry. I prefer to fry on baking paper in oven so that they are crunchy and not fat and perfect as a snack. Goes well with simple lettuce or sour (acid) milk (kefir) or buttermilk.
