    I've started fermenting my own kefir.
    I've got it down to a beautiful, smooth yogurt texture.
    I also made a few batches of cream cheese from the occasional overfermented batch.

      @@donnaml8776 Yeah same, plus i get an organic creamy yogurt wich just 7.4g of carbs per 150g (because that's how much yogurt is in one can) so it's pretty low carb compared to most other yogurts.

      @@loganwolv3393 hmm 🤔, I like goat’s yogurt 🐐. I get it from the farmer’s market. That tastes a whole lot better than kefir which I know is similar to kefir anyway.

      @@ajayaharoan3887 It helps counter the effects on my gut biome from cheat days. It balances out the good/bad bacteria ratio and reduces the frequency of die-off symptoms.

    Easy choice for me...I've tried kefir several times and generally cannot stand it. On the other hand, I'm okay with kombucha so I drink this one occasionally along with plenty of green tea. Besides plenty of cruciferous vegetables, I also eat sauerkraut and beets regularly so I think I'm doing enough right things. Cheers.

    Ferment, ferment, ferment! When you can where you can! Love water kefir and kombucha both . Brew my own. Bake my own sourdough sprouted wheat bread too. Destroys anti nutrients making the bread more digestible and with a lower glycemic index due to the fiber present in the dough. Does not kick up my blood glucose consumed in moderation.

    I live together with my kombucha-mother for almost seven years now! She is brilliant and I drink about 6 to 8 liters a week. I love it when it has done the job and I get sparkling drink, sour but doing so good. Thanks doc!

    I'm a kombucha home brewer. Does kombucha have too much sugar is a slightly complicated question. The process is simple enough. You start by brewing some strong, sweet black/green tea, let it cool to no more than lukewarm, pour the tea into your fermentation vessel and then placing the kombucha symbiot in the vessel too. The kombucha will float and spread out over the surface of the tea to take up all the available surface area.
    You definitely start out with a sweet tea and it turns sour the longer you let it ferment. Kombucha is a sweet/sour drink and how sweet or sour it is is up to the brewer. If you let it brew long enough then it will become as sour as apple cider vinegar.
    Numerous commercial kombucha teas are left a little sweet because the public isn't into drinking things as sour as straight apple cider vinegar. Sugar free Kombucha's are not however better. I don't consider them to be kombucha at all and if you look carefully at the ingredients there are artificial sweeteners in them.
    Kombucha is sweet/sour and how sweet and how sour is totally up to the brewer. If its not sweet/sour then its not good kombucha.

      Ditto, let it cook. My glucose meter has taught me where sweet spot is for minimal sugar & max flavor.

      Some sweetness should be there as when it turns very sour the bacteria themselves die due to more concentration of acetic acid, sweetness also ensures that substrate is left for bacteria to feed on and multiply
      The more sour doesn't mean its more healthy

      I've made my own from black tea. Did not know I could make it with green tea, thanks for that. A lot of information I looked up years ago about brewing it made seem like finding a scoby to start was a big task. For that all I did was use store bought raw kombucha. Poured that in my big jar of tea and stuck it in a dark corner. By the time that batch was done the scoby was a centimeter or more thick. My question is what do most people do with all the scobies they'll end up with. I always felt bad tossing them and no one I knew was interested in brewing.

      You should only drink 4 oz at the time. And look for one that doesn't have any added sugars.

    You are earning my trust.. I used to drink lemon water in the morning and a shot of apple cider vinegar at night.. i have started to eat eggs again along with sausage, bacon, ham.. I am also using extra virgin olive oil in my salads.. i just started my first batch of kefir so i will have you let you know how that goes..

    Kefir...hands down! Kombucha can be too sweet or fruity for me. I do not have a sweet palate ...more savory/sour which is why I prefer kefir. I use it in dips and pasta salads. The “tang” just ups the flavor profile.

      Some kombucha is sour, because the bacteria eats the sugar if u let it go longer.

    I crave kefir. I eat it with burnt ezekiel bread and almond butter. My bad yeast level has improved greatly by muscle testing. I'm gonna see if my body likes kombucha today.
    BTW your video on ibs/iodomere saved my life...I had it. My thyroid was allowing urine to get into my bowel. What a ñightmare. Now I'm finding my thyroid isn't controlling my liver giving rise to liver toxins in my blood, my body using hernias to vent the toxins.

      @@donnaml8776 yes that’s the case, the fermentation process transforms the sugar. But you still have some sugar left at the end. Usually 3-5mg per 100ml

      @@gilmomoney you might not turn your nose up at it yet. I’m not a sweets eating or drinking anything. You might still look into kombucha, in the fermenting process the yeast grows by eating ALL the sugar. The “mother” in Kombucha is started by yeast and sugar, but none of the sugar remains because the yeast eats it all up. The important thing is to allow it enough time to grow. This can take up to two weeks if you make it yourself. And you must keep it in the dark during this time. I’ve made it myself in the past. It’s worth investigating.

    I get the plain Kefir with no flavoring or sugar (sour and almost undrinkable for some). Then I simply add a 1/2 spoon of monk fruit/allulose. And then top it with a dash of pure cinnamon powder. It tastes much better and I know there is no hidden sugar or other additives. It’s a daily beverage and my body has been thanking me so far ❤

      @@AmerieFanbase I haven’t noticed that it GIVES you energy, instead it gets rid of the drag on your energy that having a unhealthy gut can cause, and brings you back to balance. I’ve lost 30 lbs and feel so much cleaner now! Just be sure to pair it with a healthy diet and exercise or it may not have the full effect. You have to feed your body (and the symbiotic bacteria within) nutritious foods and plenty of water to keep it running well.

    I make water Kefir, and drink it every day, I vary the second fermentation with fruits to produce a nice fizzy drink. I am sure it has great benefit to my Gut.

      The main things you'd want to do is reduce inflammation and overall acidity and toxicity. Reduce stress of all kind too, ofc. These things hinder the health and repair of all tissues, more so than a lack of nutrients.

      No I didn't mean with ice, that's actually bad for most all injuries. It might bring down swelling but it slows the nutrient supply and healing.
      I meant thru diet. Stop eating foods that are inflammatory. Such as vegetable oils (high omega6 = canola soybean corn all of em), and allergy 'foods' i.e with gluten, casein, lectins, even 'nightshades' for many. And ofc, cut way down on refined sugar/ carbs. Try to fast as much as you can.

      Yes, kefir and sauerkraut are better for their lactic acids and colonization potential of the gut. Fiber from the cabbage is very helpful. Less meat, dairy, wheat, lectins, sugars. Do salt water flushes in the mornings to clean out the colon. Practice fasting more and more. Try a 10day+ master cleanse (lemonade + salt flush)

    Kombucha is made from green or black tea.

      @@samiryan214 There are two types of kefir. Milk kefir is the most common and made using milk. It's fermented milk - most of the milk sugars are removed rendering milk a safe adult food. Water kefer is made using coconut water and is more similar to kombucha. Milk kifer is very much an (easy diy) super yogurt.

    Question: with milk at 12 grams... does making it into kefir eat up the sugar that it started with? I hope so. Have to watch sugar that feeds too much yeast in my body. Heard cancer feeds on sugar. Ive bought grains in past for milk kefir. Loved it with just a tad of rasberries added. But was even too much sugar for me. Gonna try koolaid pks with no sugar just stevia. Since moving to new state now out of grains again. Love making it now with kefir i buy, then add to bottom of jars, then fill with organic milk. After 12 hrs turns to kefir. Only it’s not as sparkling as with grains, but great to keep milk longer for months & cook with. Can save spaghetti glass jars for this or jelly jars. Found Tons ideas on CZcams. Just looking into ideas to flavor with greens, avocados & garlic, chia seeds, milled flax etc. Bet would be great as onion dip too. Anyone else with non sugar ideas? Thanks

    This winter I started making water and milk kefir....and I only got sick once and it lasted 2 to 3 days. Usually, I get sick 3 or 4 times a winter along with depression......I will keep drinking kefir forever. I will try to make beets kvass this week sometime and add that to my diet.

    Dr Berg, I’ve had a weird ear pressure for a few years now and I’ve noticed that certain foods aggravate it including kombucha. Other foods like dairy do as well. I’ve decided to stick to kefir for now until I find out more about this ear pressure and what’s specifically causing it.

      I’m curious, are your sinuses ok? I’ve found that when my sinuses are inflamed it makes my ears feel a lot of pressure, and believe me my ears are very sensitive. I also have tinnitus on top of it. Well, anyway I was told that there is this tiny canal or tube between the sinuses and the ears and many times it’s that that gets inflamed. I’ve used bee pollen that I’ve gotten from the farmer’s market and that helps.

      @@donnaml8776 Thanks a lot for your comment. Very interesting, because I’ve always had issues with my sinuses. I’ve heard a lot about bee pollen, I’ll definitely look into it. Just curious, is there a way or some kind of testing you can do to find out whether the tube is inflamed or infected? I have other friends who have tinnitus, I think this could be very useful for them. I’m so lucky it’s only ear pressure and not tinnitus for me.

      @@somaiasbeita7612 Just so you know, that the bee pollen doesn’t help with my tinnitus (the ringing and sensitivity). I haven’t been able to find anything for that. Although, it does get louder when there is more pressure. Before I went on keto (this last May 2021) I took anti-histamines everyday. Twice daily. But since I’ve started keto I do not need them anymore. No sugar or carbs much less problems. I used to sneeze, and cough. Every morning I was a mess. At first with keto I’d need to take the bee pollen a lot, but now I barely think about it. Again it hasn’t stopped the ringing and sensitivity. I’ve always had a sensitivity to sounds so that is connected to something else.

    Hello from the Netherlands!! 💞We have recently so-called "Polder kefir" on the market which is ready-made Water kefir!! or the starter water kefir culture,, so you can make your own at home!! (which is much cheaper):) ingredients: dates, figs and a dash of apple cider vinegar, which impart their flavour to the drink during fermentation and it's very tasty! The polder kefir is made in a traditional way: water kefir culture is added together with the above ingredients to water in which organic sugar has been dissolved. This creates a fermentation process in which the sugars are converted into probiotics!! These are formed by different families of lactic acid bacteria.     Label on my Lifeway Kefir carton says 9 grams of sugar! So does the gut bacteria benefit outweigh the carbohydrate intake? Just curious.

    Kiefer combined with sauerkraut have healed my Gerd. I can eat spicy food again with no need for prescribed or over-the-counter medication

    Love kefer but the one I buy doesn't seem to be low carb. Is there a brand that is? Also I love sourdough bread and miss it the most since I started keto. Is there a good keto sourdough available?

      Buy plain unflavored along with the fruit or the vanilla manufacturers assume they need to add extra sugar 🙄. Milk itself has plenty of sugar.

    Personally, I like water & milk kefir(I use raw A@ jersey milk). Kombucha often is made with non-organic black tea & has caffeine.

    I gave them both up to eat keto, since I couldn’t be certain of the sugar content. Them and water kefir soda. Is there a simple way to be sure you aren’t actually getting the sugars?

      Yes, let kombucha brew at room temp longer till strong tasting. If store bought, crack the cap & leave on the counter till more sour, week or two. My glucose meter has taught me how long to go to eliminate sugars almost completely. Only need 2-3 ounces a day for the health benefits, about a shot

    Sourdough DOES use both....but, once it's been baked, both kinds of bacteria are no longer living. So all you have left are the acids they formed.

    I have 500 pls of (no added sugar,) kefir with added organic cherries, (6%) and spread it throughout one day, and the next day I drink a 500 ml btl of ginger kombucha, equinox brand! Losing weight & delicious!!

      Yes, sauerkraut over kefir is much better, I agree. Much more beneficial, and without the dairy.

      As long as its true organic then its healthy, but vast majority of dairy is toxic

    I read the front google page that kombucha bacteria mostly doesn't survive the stomach. Neither does yogurt. Is this true?

    Can the bacteria from kombucha be fed by raw honey or bee pollen as opposed to cane sugar? That’s the main ingredient that stops me from drinking it. I’ve feel like kefir is the superior probiotic because it’s bacteria feeds out naturally occurring bacteria and it once relieved me instantly when I had an excruciating stomach ache from eating out late one time.

    Yes I started making both Kefir and kombucha tea about a month ago. I am almost 70 and at my age I thought I would try them and see how I go. Well Drinking a glass of kefir for breakfast makes me go to the loo to do number 2s within 2 to 3 hours after drinking it. around 3pm I also have a glass of kombucha and this is satisfying and I noticed I eat less so hopefully I can get rid plenty of kilos as I weighted 126kilos before I started and now I am 118 with at least another 45kilos more to lose as I am only 160cm tall. I enjoy watching Dr. Berg as he has inspired me of everything he says. I also suffer with high B/P, high cholesterol, have sugar diabetes, enlarged prostate, spine and knee arthritis, also suffer depression after losing my sweetheart in 2016 with bowl cancer. Other than that I'm fit as a fiddle and trying hard to eat the right things. Every day is a bonus and grateful I am still on this earth. Thanx Dr. Berg 🥰

      Stress is so damaging to general body health, that people really SHOULD spare no expense to remove most of the stress from their lifestyles. It's so important that job or career changes are absolutely warranted.

      Try taking taurine 600mg daily. It's something that's good for the heart, kidneys & eyes. I've found it very helpful

      Milk kefir is safe for lactose intolerant people. But it has to he introducee slowly in small amounts.

      I’m intolerant to cow’s milk (and also sheep for that matter (feta is from sheep)), so I use goat’s milk. The proteins are smaller in goat’s milk and easier to digest. Which means nothing if you’re actually “allergic,” allergic. I don’t like the taste of kefir anyway. So I drink kombucha.

      Kefir water can be good. It can be a nice fizzy drink flavored how you want. I've never tried kefir milk. I'm a kombucha fan.

    I really got into kombucha for a while but it gives me terrible gas, irritates my gut. So I stopped drinking it. I’m going to try kefir next and see how my gut responds.

      Flatulens is a sign of good health, when you feed the good bacteria in your guts they produce gas, it shouldn't smell bad though.

    Dr Berg I had kefir at home and make drink. I wanted to delay kefir fermenting so left in the fridge. Accidentally someone pushed it back touching the back of the fridge wall and now my kefir became half frozen. I defrosted and left it to ferment not sure if it will and if it does will it be just as beneficial?
    Another question I'm using normal milk not organic since it's hard to find all the time and expensive. Will it be just as beneficial like organic?

      I believe that is from using cheese cloth and fruit flies are where the larvae come from.

    I make my own kombucha and monitor, by tasting, the sugar level. Too sweet I let it sit a little longer. I used to make kefir and water kefir also., it got to be too much. I also enjoy making and drinking ginger beer especially in the evening after dinner for settling my stomach. There are benefits to all of them. I do need to add kefir back in though.

    Dr. Berg, are you aware of the gcMAF in unpasteurized kefir? That so important for it's anti-cancer properties, telomere preservation, and so much more.
    I gave my autistic niece gcMAF and its had startlingly brilliant results
