Does anyone know how the screens work? Like it isn't just flat it; when you move and your perspective changes the landscape adjusts correctly...

A bit late, but maybe you'll find it interesting anyway... They use 3 projectors at different angles that are pointing towards a bent canvass :)

They are using a special type of projection which you can mostly find as a „collimated“ display, which uses a big, vertically (and in this case also horizontally) curved mirror in front of the cockpit and the projection itself takes place above you and perfectly aligned with the mirror so you basically see a reflection of the picture to simulate the correct angles from both seats accordingly - if you only use a projection screen in front of the cockpits only one seat or the middle (no seat) would have a view with correct angles of distant objects ;)
Anybody correct me if I got something wrong - trying to learn everything about collimated displays at the moment 👍🏻

Another video from their channel where you can see it - and just google it to find some schemes of how it works

actually the screens use mirrors to give an image that is focused at infinity, i.e., it appears to you that the picture is infinitely far away. So if you move your head sideways the image would appear to stay in the same place unlike a normal screen that's close to your face. Pretty cool technology
