      I saw one other chef reacting to the video saying he needed to add water because of the chili jam. The sugary jam likely started to drain moisture and burn, so it needed the extra water.

      @@Kyle_116 I know this is an older reply, but just wanted to say - this is just yet another layer of fucking it up.
      And this doesn't even have anything to do with asian cuisine or whatever.. Sugar caramelizes under heat. And the longer you heat it the more intense the caramel taste gets (and gradually more bitter, until it eventually burns)
      Now if you make, say, a dry rub for a slowly smoked piece of meat for bbq, this is something you want, right?
      But not when you want to *glaze* something
      Glazing something and frying something at the same time by definition already clash.
      You could fry something and AFTERWARDS glaze it, if you'd want. Like really at the end.
      In this case it would still take like butt, but at least, on a purely technical level it would be *possible* to do it like that.
      What the guy did here was already really bloody dumb on even the most basic technical level.
      Mind boggling, honestly.

    I actually learn a lot from videos dissing Jamie, the chefs really impart good knowledge on how to cook properly. For not studying and doing proper research on Asian dishes that he cooks, Jamie has it coming.

    A Japanese here. Looking at the recipe Eddie showed at the end of the video, even though I'm not a chef and I just cook for myself, I can tell this recipe is a very Asian/Japanese way and it is the golden recipe that everyone teaches you. Folks, you cannot go wrong with this recipe. Perfect egg fried rice.

    Love the fact that Eddie even took the time to show us his way of making egg fried rice, so simple and looked perfect 😁 also the added note about putting spring onion in cold water to both keep it fresh and to water down the taste was such a nice touch 👌 I always find spring onion to be overwhelming, so I'll be trying this trick next time I make my fried rice 👍

    I went to Jamie Oliver’s restaurant in Stratford Westfield and it was horrible the foods were not consistent and there were plenty of people complaining when I was there. The one in Oxford was not bad. I guess each restaurant has their own standard which is horrible.

    Fun fact, the technique Eddie show's in the end of the video is called "Silver covered in gold" or "Gold covering silver" or "金包银". I came across it in some random Chinese tv series years ago. Basically the rice is silver and the egg is the gold, each grain is wrapped in gold and fried. More decadent example is to use only the yolk, this will greatly enhance the finish product.

    Hi Eddie, was a Japanese cook before and did garlic fried rice exactly they way you did countless times and was one of my fav fried rice. But I do add a little bit of butter in the ending with a double toss to enhance the fragrance of fried garlic and egg. Cheers

Savory and salty, may be sweet but that should come from the meat (like sweet ham or even sweet cured meats, heck even little bit of sugar on egg during frying), not from the rice itself.

    Olive oil is used a lot for cooking in Mediterranean countries, like Spain and Italy. But yeah, you have to watch the temperature. But I know you never use it in Asian cooking.

      Sesame seed oil is the favorite, vegetable oil is the backup, olive oil is for your salad or subway sandwich.

      @@eldoradocanyonro You use vegetable oil to season the pan, the sesame oil is for the flavoring when cooking the garlic and rice. I do not ever touch peanut oil, vegetable oil for deep frying and seasoning pans, and olive oil to sautee and cook pan fried items like steak and potatoes. I've never tried avocado oil so no clue there, but in over 30 years of using olive oil I've never had a smoke issue because I don't cook items on too high of heat. That just cooks it too fast, cooks out all the flavor, and make everything dry and tough.

    Jamie Oliver is just an arrogant snub. He doesn't bother to understand the context of food from other cultures. People often criticize Americanized Asian dishes as non-athletic, but at least those dishes have historical background and context, it makes sense how food comes to US and evolve to its own unique thing, but Jamie Oliver's Asian dishes are just random made up crap like how toddler make a mess with Play-Doh and call it "Art"...
    Jamie Oliver, it's cool that you are trying to advocate fun and easy cooking that anybody can do, but do it with the dishes that you understand, don't insult other cultures like that. You don't get to have artistic license before you get the basics down.

    I cook a lot of Mediterranean foods, so I love olive oil, but I'll be damned if I'll use it for an Asian dish. I prefer a refined peanut oil in lieu of vegetable oil, but it's just as neutral.

      but if you want to tell people a recipe to make a proper one, then dont do it......

      @@keepitprivate3856 even though I love olive oil.... you should never use it like Jamie did. I mean, maybe he didn't burn it because he didn't use a wok, but were you to use a wok over an actual flame the oil would hit the smoke point and leave a weird taste. To actually use olive oil to fry rice you should do it in a big pot, use the oil to caramelize onions and garlic, lightly fry the dry, uncooked rice and then put in the water so you have a "refugado"

      @@SplitWasTaken Exactly. I usually start with minced garlic, and if I'm using a wok over an open flame, the garlic would come out looking like Kay's Cooking by the time it was fragrant. It's just too low of a smoke point for a dish like this.

    I often use many other ingredients. Which I fry seperately and decant into bowls or plates, thus preserving the character of the ingredients. Only at the end do they get mixed back together. It looks like the chef used Koshikari rice, which is the only real rice unless you need jasmine for something. I whole heartedly approve of this chef otherwise, I just like to use more varied ingredients.

      In the West, it’s often served as a side dish with a meal combination, especially at lunch. In almost any restaurant you can get an order of fried rice as an entree. In my non-Asian family, we would order several dishes to share amongst the family, one of which would be fried rice.

    Love me some fried rice and make it often. Luckily I researched the proper way to do it and now I can honestly say it's as good or better than my local take away! Never used garlic like you did, s that's my next project. I've also never mixed the eggs into the rice before cooking, another thing to try.

    He is a professional chef. And he supposed to cook a dish that will make people craving for more. A kind of dish that people will like to eat, something that people will loved and bring a smile on their lips. That is a real chef.
    Cook with heart and soul. Cook something that you love and you want people to love it too. Even a mom loves what she cook and she want her family to like it and give compliment on her best dishes. If you cook and find it so disgusting, then don't show it to people then.

    I really don't want think it's a side dish in a western country. It has all the things for a dish in it already, can't be a side dish. That's like calling lasagna a side dish. Jamie Oliver just got it wrong 😂

    Jamie Oliver is English, but yeah, he’s very popular here in Australia. He’s OK when it comes to British or Italian cuisine, but I don’t think I’ve ever seen him do a decent Asian-style dish. 😂

    egg/soy is a protein so technically by western standards it is a main dish, so you have green onion as vegetable and peppers, rice as starch, soy sauce/peper sauce

    I was in India 3 months and Thailand 1 month and they made real fried rice and in Thailand I actually went to cooking class to learn how to cook asian food.
