Yes Chef it's beautiful, thanks for so many fantastic tips especially dissolving the seasonings before putting it into the broth which was absolutely clear. Will definitely try to make this. Loved it and your English is so good.

You know its old school Vietnamese when they bring out the sand worms. If you can get it, try dry roasting them until they're crunchy and then have them with beer... so good!

    That pho looks fantastic.
Also, there are two variations of coriander. One is called cilantro, and the other one is called culantro. The one who showed us here that is the long leaf is culantro. It's actually way stronger than cilantro in terms of smell and flavor. Cilantro is closer to parsley in appearance. I though Panamanians (I am Panamanian) and Puerto Ricans were the only ones who used it. Not my favorite herb though, but I do acknowledge it's important in certain recipes like sancocho, souse, and pho.

In the UK we call it coriander (cilantro). Havent see the culantro that is used here, but I guess it will be available in asian markets.

Thank you Sir for a great video with exceptional content. I appreciate your repeating high points most chefs post videos like they are explaining to fellow chefs...I didn't even know culantro was a item that is so important to pho. I always have it on hand to make spanish sofrito. Small world. There are a lot of Asian and world markets in Atlanta Georgia so I'm glad I've learned this recipe from you Sir. Thank you.

Looks amazing such a talented chef. I would defiantly want to eat this version of Pho looks so delicious. The only thing I wouldn't eat is the worms but the rest is perfect. Unlike what Rachel Ray said, you can't do whatever you want, there is a certain to make Pho looks like a difficult dish to do. After seeing this video I understand Rachel did nothing correctly, it was not even near of becoming a Pho it was all wrong. So thank you so much for showing how the real deal is done.

@ in Chile, is hard to find good asian cuisine, specially Thai food or vietnamese food which i love and what they serve here is pretty mediocre, reason why i asks out premade stock is the gas usage here in Chile it's very expensive specially if i have to leave it simmering for 8hours

Thank you for showing us how it Correctly done. Maybe use the 4 hour very low simmering more often since even you were impressed with the results. Hi from Barbados.
