I'm not at all a fan of this recipe but wow big props to you for being so objective! On various points like the stainless steel pan (it's not Teflon), Cauliflower stem, etc.You're definitely more qualified to critique cooking, and a lot more fair, than Uncle Roger 👍.

If I remember correctly Gordan was on a set time limit to get the ramen done which is impressive but too many shortcuts, for it to be called ramen.

I suspect it would still be a very edible bowl of noodle soup, but just not worthy of being called ramen in the true sense. But he is still a great chef, and I am sure he would be happy to learn where he went wrong.

I have seen so many people make the same mistake with the miso paste. Miso must only be used to make the tare.
Speaking of reactions, I recommend you check and evaluate Joshua Weissman's pho. He also made tom yum recently and Thai green curry as well.
