Lemper Ayam/ Chicken Glutinous Rice wrapped in banana leaf

    Lemper ayam/ chicken glutinous rice wrapped in banana leaf. It is one of the most popular street foods in Indonesia. It's a savoury snack made of glutinous rice filled with seasoned shredded chicken or you may fill with fish or abon (meat floss).
    The filling and the rice are cooked with aromatic spices and herbs that make this lemper so tasty and delicious. The smell of the grilled banana leaf gives another flavour to the lemper.

    The Filling
    =========
    * 2 big shallots (Indonesian: 10 bawang merah)
    * 6 garlics (Indonesian: 6 bawang putih)
    * 8 candlenuts (Indonesian: 8 kemiri)
    * 1 tbsp coriander powder (Indonesian: 1 sdm koriander bubuk)
    * 1 tsp cumin powder (Indonesian: 1 sdt jintan bubuk)
    * 1 tsp salt (Indonesian: 1 sdt garam)
    * ½ tsp pepper (Indonesian: ½ sdt lada)
    * 1½ tsp sugar (Indonesian: 1½ sdt gula)
    * 3 bay leaves (Indonesian: 3 daun salam)
    * 6 kaffir lime leaves (Indonesian: 6 daun jeruk purut)
    * 4 tbsp cooking oil (Indonesian: 4 sdm minyak goreng)
    * 100 ml coconut milk (Indonesian: 100 ml santan)
    * 400 gr chicken breast fillet (Indonesian: 400 gr fillet dada ayam) - Boiled & shredded (Indonesian: rebus & suwir)
    * 1 tbsp tamarind puree + 50 ml water (Indonesian: 1 sdm asam jawa + 50 ml air)
    * 50 ml water (50 ml air) - To cleanse the remaining paste in the cup
    The Glutinous Rice
    ===============
    Using rice cooker and its measuring cup. For the water level, reduce by 0.5.
    For example, when cook 4 cups, water level at 3.5, to avoid the soggy rice or too soft.
    * 4 cups glutinous rice (4 cups beras ketan)
    * ½ tsp salt ( ½ sdt garam)
    * ½ tsp lemon grass powder ( ½ sdt sereh bubuk)
    * 3 kaffir lime leaves (3 daun jeruk purut)
    * 4 bay leaves (4 daun salam)
    * 1 pandan leave (1 daun pandan)
    * 200 ml coconut milk (200 ml santan)
    * Boiling water (air matang)
    Other things you will need:
    * Banana leaves
    * Toothpicks
    Notes:
    * The average size of shallot (bawang merah) in Australia is quite big, so you may use 10 shallots for Indonesian size.
    * You may substitute the shredded chicken with meat floss (abon)
    * The serve of the rice depends on your desire
    * You can adjust the amount of salt and sugar to suit your taste.
    * To make the banana leaves flexible, you may heat it on the stove for few seconds or dry under the sun or dip in the boiling water. This process is intended to make banana leaves not easy to tear.
