  • Here’s an easy gluten-free and keto friendly recipe that is delicious and healthy! A dessert that is packed with nutrients. These mini cake bites made from kabocha squash, a Japanese winter squash. Simply delicious!
    INGREDIENTS
    450 grams of kabocha squash
    30 grams butter, softened
    1/4 cup swerve confectioners sugar substitute
    1 Tbsp coconut milk
    1 egg yolk
    1 tsp vanilla extract
    1 cup coconut flour (more as needed)
    Black sesame seeds (optional, to decorate)
    EGG WASH
    1 egg yolk
    1 tbsp heavy cream
    1 pinch sea salt

    They are truly looking so delicious and tempting didn’t know they were that simple to make I love baking at home so definitely will give it a try of your way of making just worried about getting them dry 🌸🌸

      How many did you have at once?!! I only eat 1 small cake bite a day. Calculate your macros. Kabocha squash is low carb keto friendly. Or did you mistakenly buy buttercup squash? That’s easily confused with kabocha. It looks very similar.

      @@lovelyrhodes7154 How many did you end up with? I normally make 12 mini cake bites out of this recipe. When I make it to enjoy as a treat, I do only eat 1 and will fit it into my daily carb intake. I would normally consume healthy fats and meat for the day if I include a treat.
      I understand that you’ve said that you used Japanese kabocha squash, but I wonder if you’ve mistaken it by buying buttercup squash instead of kabocha, thinking that it is kabocha. It does look similar but it is higher in carbs.
      1 cup of buttercup squash is 9.3g total carbs, 1.3 fiber, 8g net VS. 1 cup of kabocha squash: 4g total, 2g fiber and 2g net (according to Carb Manager).
      Kabocha squash and buttercup squash is similar in size, color, and with a tough skin and stem. Kabocha is round but has a flat bottom without any imperfections on the button, where as buttercup squash looks like it has a belly button.
      As for the ingredients in this recipe:
      Depending on the brand of coconut flour, 1 cup is about 20-24g of net carbs. In this recipe I used 1 cup of coconut flour.
      1 Tbsp of coconut milk is .8g of carbs (make sure it’s organic and unsweetened)
      1 Tbsp of heavy cream is 1 carb (I used organic heavy cream by Organic Meadow)
      According to USDA website, 100g of kabocha squash has 8.24g total carbs, 1.2g fiber, 7.04 net carbs. Which works out to be 31.68 net carbs for 450g. In this recipe I used 450g.

      This recipe makes 12 mini cake bites. Which works out to 4.79 net carbs per mini cake bite, using 24g net carbs for the coconut flour. The other ingredients are butter, swerve, egg yolk, vanilla extract and sea salt.
      Please double check your daily meals and macros. 1 cake bite alone should not kick you out of ketosis. I’ve been consuming kabocha squash in moderation on low carb keto for almost 4 years. It has not kicked me out of ketosis yet, or my group members.

      @@KetoAsianFlavours I made 12 pcs too. About the squash it’s leveled Japanese kabocha unless they leveled the buttercup squash to a Japanese kabocha 😱
