This Creamy Red Lentils Soup is So Good, It`s Out of This World!

- This red lentils soup is absolutely delicious! Such a comfort meal on a cold, rainy day!

Recipe:
For the soup:
- 2 cups/400g red lentils
- 1 big carrot
- 1 medium/big onion
- 4 garlic cloves
- 3 small/medium potatoes
- 3 small peppers or 1 big
- Olive oil, about 2-3 tablespoons
- 1 sprig fresh rosemary, you can also use dry
- 2 teaspoons dry oregano
- 1-2 sprigs fresh thyme
- 1 tablespoon tomato paste, you can also use canned tomatoes
- About 7-8 cups/1,7-1,9 liters vegetable stock, I started with 7 cups, but added a cup more, it all depends how thick you want the soup to be
- 1/4 teaspoon cumin powder
- 2 bay leaves
- Salt and pepper
- Parmesan flakes for serving
- Fresh parsley for serving
For the bread croutons:
- Some old bread cut in cubes
- Fresh rosemary
- Garlic, crushed with a knife with the skin on
- Olive oil
- Paprika
Boil the soup for 25-30 minutes until all the ingredients are cooked and soft, then blend it. Remove the bay leaves before blending. I started with 7 cups of vegetable stock, but added about a cup extra, it all depends how thick you want the soup. Keep in mind that the soup will get thicker once it cools down.
Roast the croutons on 392F/200C until golden and crispy.

Red lentils are my fave because they cook so quickly & get really creamy. Great with frozen veggies mixed in, some bullion paste, hot sauce, & warm, earthy spices like curry powder. Sop it up with some bread.

Red lentils get mushy when boiled and it`s so good blended! I do make lentil soup without blending, but I use green lentils. Anyway the two are completely different experience!
