Irresistible Pineapple Upside-Down Cake Recipe

    Ingredients:
    Topping:
    4 tablespoons melted butter
    ½ cup brown sugar
    1 - 20 oz can pineapple slices
    6-8 maraschino cherries
    9 inch deep dish pie pan or cake pan
    Cake:
    2 cups all purpose flour
    1 1/4 teaspoon baking powder
    1/2 teaspoon baking soda
    2 eggs
    1/2 cup (1 stick) butter at room temp
    3/4 cup granulated sugar
    1 1/2 teaspoon vanilla
    1/4 cup pineapple juice (from can of pineapple slices)
    3/4 cup buttermilk
    1/4 teaspoon salt
    1/4 cup sour cream
    Instructions:
    1. Preheat oven to 350 degrees. Combine flour, baking powder, baking soda, and salt in a bowl. Mix until fully incorporated and set aside
    2. Add melted butter to the pan; roll the butter in the pan to coat the sides. Sprinkle brown sugar evenly across the bottom of the pan. Place a pineapple slice in the pan's center, then place the remaining five slices around the center slice in a circular pattern. Cut the remaining three slices in half and place them along the sides of the pan. (refer to video for visual)
    3. Start the batter by smoothing out the butter in a bowl. Add sugar and mix on medium until the mixture forms a crumb-like texture. Next, add eggs and mix until combined. Add sour cream, pineapple juice, and vanilla, and mix on medium until thoroughly combined.
    4. Add dry mixture to the batter a third at a time and rotate buttermilk in between. Mix on medium until flour and buttermilk are fully blended into the batter. Pour the batter into the pan and smooth out.
    5. Bake in a 350-degree oven for 40-45 minutes. At 25-30 minutes, tent the top of the cake with foil to prevent the top from browning too quickly. The cake is ready with a toothpick and comes out clean.
    6. Let the cake cool for 15-20 minutes. After that time, place the plate over the top and flip it to release the cake. Allow to cool and serve.
