    Can't wait to try it! I don't do dairy though and so will leave out the cheese. Any ideas on how I might compensate?

      The cheese is optional, of course, but a good substitute often for the flavor of cheese in dairy-free recipes is nutritional yeast. I have not tried it with baking though. This isn't yeast like to bake bread but something specifically called nutritional yeast; I find it in the bulk aisle at a local natural foods store. I'd use a couple of tablespoons in this recipe as a start!

      Tom, I thought I replied but can't see it now. A great substitute for cheese in this kind of recipe is nutritional yeast - it's a dead ringer for parmesan cheese in flavor!!!
