Read the title as "Rockstar Simulator" and immediately thought of Rockstar Games (GTA).
Would be a pretty funny game, where all you do is hype up the next game that you maybe will release sometime on this side of 2050. Side missions would include ripping people off with virtual currencies you can buy for real money in your games and letting hackers run wild.

AI in cars is just about driving and understanding what's on the road, not a chat simulator. But the thought is funny

You should check out the colony building game Rimworld I could only imagine the random stuff Kevin could do XD.
He has at least two that I can find right now. Titled "Rimworld but my cult is insane" from 5 years ago and "I turned an entire planet into pure chaos" from two years ago. Might be more than that, but those are the ones I could find.
