Because he was channeling his inner child. My Dad is almost 60, and he still feels like a child every time he gets to drive the Fire Engine. He works for the fire station part-time. He has easily 20 years' worth of fire fighting, and he loves the fire engines.

It was probably to add drama to the episode and reveal more about the chefs stories. Adds a level of empathy to hook viewers.

is it just me or is chef Claudio absolutely obsessed with team dynamics. Hes always the one commenting on that sort of thing, like how captains run their kitchens, and what happens when theres no captain
It’s probably just his schtick. Each judge has their style of critique that they carry throughout each season. Micheal tends to be the most sympathetic and loose when it comes to judging whereas Claudio and Alvin are tougher. Alvin acts more like a mentor and Claudio gives hard but good criticism.

Former bbq pitmaster here. Ribs should not be fall off the bone tender. I know it's a preference 90% of the time. However, your ribs are overcooked if you can pull the meat from the bone. If that would have been a bbq competition, red most likely would have won.
Like what you said, more than 90% of the people prefer fall off the bone ribs. I don't know what reasoning you have for saying that it should not be that way. If more people agree and enjoy it that way, we don't really care if that is 'technically' correct or not. We just want it that way.
