Anzac Cookies that are nourishing & healthy

  • Anzac Day is an important national day of remembrance in Australia and New Zealand. It is a tribute to all Australians and New Zealanders who have served in wars, conflicts, and peacekeeping missions and paid the ultimate sacrifice. Additionally, it acknowledges the contributions and sufferings of all those who have served.
    Today, honouring those who served our country, I’m making Anzac biscuits. It has been a tradition of mine for several years.
    I chose a healthy combination of oats, spelt flour and coconut flakes to make this chewy yet slightly crumbly cookie.
    I didn’t have coconut sugar, so I used coconut nectar, which tasted amazing.
    Crumble this cookie as a yogurt topper, or chop and put it into some plant-based milk for oatmeal with a difference. Soak overnight for extra deliciousness, heat in the morning and enjoy.

    Ingredients
    Anzac Biscuits
    2 cups of quick organic oats
    1 cup spelt flour
    1 tbsp baking soda
    3 tbsp hot water
    1 cup desiccated coconut flakes
    1/4 cup coconut syrup
    1 tbsp maple syrup
    1/4 cup melted coconut oil
    Bake for 15-20 minutes to your liking (less time, softer cookies, more crunchy!)
    Tips
    Mix the baking soda with hot water and watch it sizzle to help make the biscuits chewy.
    I liked my biscuits soft, but you can put them in the oven for longer, so they have a bit of a crunch.
    Allow to cool and keep in an airtight container.
