Today I'm going to show you how to make high protein cookies without protein powder.
These protien oatmeal cookies will satisfy your cookie cravings without the use of sugar, butter or oil.
These cookies make a delicious, wholesome pre or post workout snack, go-to breakfast or even a dessert.

PROTEIN COOKIES RECIPE
(makes 12 cookies)
Ingredients:
1.5 cups ground oats or oat flour (150g)
1/4 cup chickpea flour (30g)
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup peanut butter (125g)
1/4 cup maple syrup or agave (60ml)
2 eggs
1 cup skyr (255g)
1/4 cup chopped almonds (25g)
NUTRITIONAL INFO (per cookie):
176 calories, fat 8.2g, carb 18.2g, protein 9.1g
Preparation:
In a bowl mix together the dry ingredients: ground oats, chickpea flour, baking powder, salt and cinnamon.
In another bowl add the peanut butter and liquid sweetener of your choice, and mix well to combine.
Add one egg at a time and continue to mix until incorporated.
Add the skyr and mix to combine.
Add the dry ingredients in, and gently fold in with a spatula, just until the sticky dough is formed.
Scoop out the cookie dough and flatten with a spoon into the desired size.
Bake at 350F (180C) for 12-15 minutes.
Let it cool in a baking tray for 5 minutes, then transfer to a wire rack.
Enjoy!

You use natural ingredients (oat flour, dates, bananas, pure PB, honey), not even sweeteners like erythritol or protein powders, which any person can find in almost any grocery shop and aren't too expensive. Hello everybody. I made them and they are delicious. I added light Greek yogurt instead Skyr because the Skyr had run out in the supermarket. Macros in calories are quite similar. I also added dark chocolate chips. Very happy with the result. Thank you

I made them eggless...so added 1 tsp baking powder instead of 1/2 and 1/4 tsp baking soda. I added a cup of applesauce too. 18 mins in the oven instead of 15 min. Perfect texture and consistency!

Yes of course! Even though it's not really the easy thing to do when using oat flour, but will do some testing. Glad you enjoy the videos!

Yes, definitely, you can make your oat flour using either quick cooking or regular rolled oats, any type of blender will do the work. So glad about the timing, hope you'll enjoy the cookies too!

You can use almond flour or all oat flour. I made these cookies and they are soft and chewy type... Not crispy. I made them without egg btw.
Hi there! Well, you could use let's say whole wheat flour, that would be my next choice. Anyway, as Vidya said, these are not crispy cookies at all.

You can find here in the comments, @vidyasampathkumar7113 used applesauce instead of eggs and she was super happy with the results.

Hi! I find it too crumbly if using oat flour only, I would suggest you use 2-3 tbps cornstarch in place of flour, it will definitely improve the texture. So happy you enjoy the recipes. Sending back love!

Hi! You could use whole wheat flour instead. And skyr, well that's the icelandic type of thick yogurt, if there's no skyr on your market, use some Greek yogurt instead.
We could add some vanilla or cocoa powder to make done additional variations!
Good idea! Some cocoa powder with some small chips would be a nice touch
Sure, that would be great, but if adding cocoa powder I would reduce the amount of flour.

Hi there! Sure, that wouldn't be a problem at all, let me think, well the first thing I would use instead of peanut butter is pumpkin puree, but also you can use mashed sweet potato, unsweetened applesauce, blackbeans, the list goes on, you can see where I'm going. Happy baking!

I prefer to keep these close in a box, I would say 2 weeks if you place them in the fridge.

Protein Cookie Recepie
Mix:
1. 150 gram Oats powder
2. 30 gm chickpea flower(sattoo in Bengali)
3. 0.5 teaspoon baking soda
4. 0.5 teaspoon salt
5. 0.5 teaspoon cinnamon powder
Mix Separately
1. 0.5 cup(125gm) Peanut Butter
2. 60ml sweetener
3. Mix thoroughly and then add
4. An egg, then mix (repeat 2 times for 2 eggs)
5. 255gm protein-rich curd (white)
Now add the previously mixed powder with the second mixture with a spatula
Some finely chopped dry fruits/nuts can be added (eg. finely chopped almonds)
Now make small balls, spread by a spoon’s back, add some more chopped almonds on the top, and bake for 12-15mins @ 180degree C.

How can I make these cookies crispy in texture ?
It would be hard to make these cookies crispy, you know there's a lot of yogurt inside and also the oat flour is more on the soft side.

Not really, I would suggest you use some whole wheat flour instead.
So, I made this. Followed the recipe step by step, just replaced it with Almond butter and thick Greek yogurt.
It turned out to be a very thin runny batter, not a dough at all!!!
All I am thinking is maybe 1 cup of skyr/greek yogurt is too much !

Odd I made it with Greek yogurt and it turned out fine, I weighed the ingredients out and that may have been the difference. It does turn out very thin but thick enough to form on a pan. I’ve had issues with baking recipes in the past and I will add a table spoon of flour at a time until it is the right consistency.
Hi! I guess your yogurt was not thick enough, so I would suggest you strain it overnight before making the batter.

No protein flour needed but the chickpea flour has a massive amount of protein so your muscles will pop eating these

It's 176 calories.
They look a little too cakey to be called cookies. If they're going to be soft it's best to omit the baking soda so they're at least denser
