      @Ballistic BBQ It's a burger joint in Memphis called Dyer's that makes deep-fried burgers cooked in oil that is over 106 years old. The 106-year-old oil contains hamburger fat that has been rendered off from the deep-fried burgers. The grease is strained every day in order to clean the oil. I know it sounds unhealthy and unappetizing, but many people that have tried it say it's the best burger they ever had. I hope you get around and do that recipe one day. Since you don't have access to oil that is over 100-years-old oil, you can probably deep fry your burger in peanut oil, vegetable oil, or hamburger fat saved from ground beef you had cooked before. Make sure you use 73%/27, not 80/20 ground beef. You need a burger that's high in fat to produce enough oil to deep fry your burgers in. Love the the burger recipes by the way.

    i work at 5 guys and he did everything right, except youre supposed to set the raw patty on the grill, let it cook until the grey is about a quarter the way up then flip it and smash it, let it cook until you start to see clear juice come out of it, then flip it again. and cook until done. and we dont use oil in the onions for the reason he stated "im not cooking 500 onions" also our bread has a secret recipe that not even the managers know

      Westsoid2009 when you have a pre-formed patty, it loses juices when you “squeeze” it while it cooks. What Jakob Evans is talking about is “smashing,” which is a technique to form the patty while cooking, ensure a good sear, and keep things extra juicy (fat bastes the patty as it rises through channels in the smashed patty). Google or CZcams “smash burger” for a good explanation/demonstration.

    Two things: Five Guys flips the burger when juices start to appear on top, flips it again when juices appear on top again, and then puts the cheese on. Here he was flipping sooner. Also the griddle on this video was too hot, because the bottom was already charred before the juices had appeared. That works for a med-rare burger, but Five Guys has to cook them thoroughly without excessively charring it.

      Pedro Escobar they only use peanut oil for the fries. they don't fry the patties, they grill them

      They're fried on a flattop. At the start of the day they rub one raw patty over the flattop to get the initial grease. This is at least how they do it at the 5 guys where my son works.

    I used to work at a Five guys restaurant. And this guy is pretty close. the difference is we use 100 Angus beef. never frozen but yes kept at 33 degrees in the fridge. When the patties are cooked we flatten them even further once they hit the flat top. It helps speed up the cooking process and prevents the terrible browning you see on this guys patties. Also i know a lot of you hate on the fact you cant get you burger cooked to order. Medium rare and the like. And ill be honest. i think cooking any type of beef above medium is a sin. But ive never had a dry burger from any of the 5 guys ive been to.to several local and out of town. Ive never cared for the fries. on occasion yeah i eat them like they are the last ones in existence but usually they are meh. but when you are the one cleaning grease traps and slicing over 500 pounds of potatoes a day you tend to not like them. Also i advice people not to eat the fries unless the sign on the wall says the potatoes are from idaho. Usually if the sign says its from somewhere else those are potatoes that have been in a warehouse for a while. about 10 percent of bad is usually rotten and they just have you cut out the bad part of the potato and use the rest. yeah those little fries in your bag, those are probably from the "good" half of the potato. i always found it disgusting and through the whole thing away when the boss wasn't looking. Now a good tip for those who love 5 guys. if you ask for extra cheese and or bacon, the first extra slice/strip is completely free. This doesn't apply if you got a burger without either of those. so you cant get a free upgrade if you will. the five guys chain is also very consistent and never screw up orders. we ate at a five guys for several years and they messed up our order once, the best part is they comped the entire meal not just what got messed up. it was food for 5 people so they lost some money but we were happy and continue to go there. ok rant done

      Kalamite i wish i still worked there. But my co workers were all friends from like highschool. And the rules didnt apply to them. I was late 3 times and was terminated on the spot the 3rd time. But 2 of my other co workers were constantly late and nothing was said. best one was when one of them came in from a heavy night of drinking and slept off his hangover the first 2 hours of their shift. Got paid by the way. Another employee came in high and did the same thing. I would love to work for five guys again just at a different location

      Christopher Stepaniak I remember my friends at Five Guys saying that, "You can come in high, just still be able to function properly.". I did it all the time after that, almost became a manager but I had to go back to college so I had to quit(n time for work and all that). A high manager, would've been pretty interesting. Which station did you work the most, if you remember?

      I wasn't there long only about 3 months. I did a lot of cashiering because i did it well. I never did assembly. My favorite was patty cooking. But other than that i did all the bitch work XD. i cut all the potatoes upwards to 800 pounds a shift. I did all the dishes once lunch rush was over. I did the cleaning in the store. Everyone hated cleaning the flat tops because of steam burns. Also don't get me wrong. i believe you can come to work drunk/hungover/high and still manage to do your job. But it irritated me when people did it and didn't do their job. I've come to work once at my current job hungover. My manager was fine with it as long as i did my job properly, which i did. I also asked for the day off after my birthday, but that's neither here nor there. But sleeping on the job AND getting paid for it pissed me off.

      Christopher Stepaniak Ahhh, ok. I get ya. For me, I was kept at the patties and fry station, rarely cleaning or cutting potatoes, BUT I was still the fastest cutter at our store.

      Foreign Foamer not here in the US. You can go to In N Out and buy a double double, fries and a shake for less than $10 and it’s good stuff.

      Foreign Foamer maybe for people in a big city it is.. but for most of the US you should be able to get this sort of food for much, much less. For a good burger, probably not much more than 5. Boring fast food burger maybe 3. For a fancy sit-in restaurant it will be more expensive ofc. But 15 for just a burger is insane.
      Cost of living is ridiculously high in some spots. Move elsewhere and you may find your dollars are worth a little more. Especially in housing and real estate..

    hey man, great recreation (: im a shift manager at a five guys location in california. a crucial part of making sure the burger is cooked thoroughly is smashing it a second time while its on the grill. if you watch a cook at five guys you can kind of pick up how the burger is made. we never season our patties ever

    You did good with the dressings part. But coming from an actual FiveGuys employee, the patties and bun is the only part you got wrong. All the ingredients we use CAN be bought from any grocery store, except the bun. The bun is a gourmet style, but its a secret recipe that even the DMs don't know. It can not be replicated by any means. Now the patties we use are %100 ground 85/15. THEY ARE UNSEASONED, CAJUN SEASON IS FOR FRIES ONLY... NO SPICES OR SAUCES TOUCH THE GRILL AT ANY POINT. Lay one piece of paper down, a patty ball that weighs 3.6 oz, another piece of paper, smash, patty ball, paper, smash. That's our double burger "stack". If you smash 2 at a time you risk flattening out the patties to the point where they will burn up fast. Lay them on the grill, NO oil, let them turn a slight grey, flip, smash once, then slide to the next spot on the grill (obviously you can't if you are using a skillet) let it cook till small pools of blood show, flip again to the final stage. Lay the cheese in a star pattern stack patties and place on bun. That's as close as you'll get without knowing the bun recipe. But over all, for not working there and knowing the proper procedures, very good job replicating.

      +Rehy Depends on the location, but $4.75 for a hamburger and $6.25 for a double hamburger. $5.10/$6.95 for cheese. $3.19 for regular fries.

    I know it's a matter of opinion, but I still don't understand why some people hate on Five Guys. They destroy the fast food chains as far as I'm concerned. So what if they don't season the meat? Seasoning is only used in the shitty fast food places to cover up the taste of the mediocre beef. You get plenty of added flavor from any toppings you add to it, plus the cheese. When I go, I typically get a bacon cheeseburger with lettuce, tomato, grilled onion, jalapenos and bbq or A.1. sauce.

      chris doyle My point was that the meat will be seasoned by the toppings anyway, especially all of the salt in the cheese. McDonald's adds salt to their food because the quality is shit, Five Guys doesn't need to.

      I'm a manager at Five Guys and this isn't even close... The meat is wrong, the buns are wrong, and the process is way off. Burger looks good but not like ours.

      I'm trying to find out how they get their burgers so thin and flat. I may be wrong as I have only eaten at two different locations (Philly and southwest Virginia). But they always get their burger patty's so flat and perfect. Could you share how they do so? when I cook with 80/20 beef I press them out as flat as possible and they always poof up once the cooking begins. I'm thinking its a problem with the meat i'm using or the technique. Thanks for reading!

    I work at Five Guys, everything's spot on except you didn't flatten or "even out" the burger patties when they were on the grill. Other than that it looked pretty good. The bread we use is our own branded bread that you probably wouldn't find anywhere else other than a Five Guys, just thought I'd throw that out there as well.

      100% agree. And I don't like 2 patties either. I make one thick patty and cook it med rare.No pickles on the burger either....just a whole pickle on the side.

    I cannot wait to try this, we have a great butcher at our local grocery store, people come to buy their high quality fresh meats from the three states around us! I can get 80/20 easily, but now gonna ask if he can prepare me some 85/15..... Thanks for posting! and the comments! Love Hamburgers on the grill, NEVER do I use propane for grilling meat... changes the flavor... I use regular charcoal burned white, add hickory ( from trees my hubby cuts at work and gathers small limbs from. I let those burn down a little( so heat will not be too harsh and dry meats out,) and then after they are coaled really well, I slap the meats on the grill, allowing natural flavors means NO ADDED salts or seasonings are needed! Brush lightly with BBQ sauce (if wanted ) a minute before removing from grill, wrap meats instantly in aluminum foil( allowing natural juices to release), then by the time I have my buns prepared, unwrap from foil tent and eat away! Always juicy and delicious!

      Ballistic BBQ Hey! Got a couple of questions for you on the Stainless plate. 1. That is stainless steel correct? 2) is that fitted to a Weber 22.5 inch grill and if so how does air circulate to keep the coals from going out? 3) did you get handles made as well for easy handling? I was just checking out your grill again and it looks like the plate is cut in half, that explains the circulations issue.

    I work at Five Guys and this is pretty accurate! We just smash down the patties before and after flipping so that it's not so thick like that, but this is really good!

    Love Five Guys. My only criticism is that they only offer American cheese, which imho is dreadful. Get some cheddar for fx sake. I guess it's all for the best. Because of the cheese situation, I order without cheese, and save myself 1-200 calories that can be made up with extra fries.

    Bit late to the party, but I figured I would add my ten cents as a manager at a Five Guys store.
    First off, I want to say that this is very close to a Five Guys burger! The order of the toppings was spot on, and you even laid out the cheese the same way we do.
    80/20 fat ratio is correct to the best of my knowledge, and yes, our beef is double ground (At least I've heard that before - I just grill the patties, I don't grind 'em!) and the weight is always between 3.5-3.7 oz for consistency. We don't do little patties; a little burger simply has one 3.6oz patty instead of two.
    While we don't use oil for the onions, we do use a seasoned grill, allowing the natural grease to glaze the onions (And mushrooms!) to a golden-brown color. For those of you who don't eat beef, either because you have an allergy, are religious or simply don't eat meat, I must warn you that both the mushrooms and onions are grilled in beef (and bacon) grease. However, if you ask for beef free onions and mushrooms, we will happily grill them for you on out bread grill, which is a surface that no meat has ever touched.
    The only mistake in this video (aside from not weighing the patties) is how high you claim that we stack them before smashing them (only two high, and we only smash one at a time) and how you grilled them. Grilling is where the exactness of the weight becomes important. Once the bottom of the patty is sealed, we flip it over and break that seal with a tool called a patty evener, which ensured that the patties are the right thickness for consistency and quality. We grill out patties thin so that we can ensure that they are all grilled well done, without burning or drying out. Pink in the center of your patty is considered a failure on our part, and we will replace it for you free of charge.
    I feel like a commercial. I didn't mean to do that. I think my job has gotten into my head. Send help.

      Patrick Smith Yes, right on top. Works great. I made another one, that I actually like better. It's cut from standard steel and plated with nickel, which holds heat very, very close to the surface. You can hold your hand less than an inch from the cooking surface and it just feels warm. However, if you touched the surface, you'd burn your finger off!

    This is how my Dad made burgers, except he used white, real American cheese, from the Deli. Not that Kraft plastic stuff. He also sliced and salted his tomatoes to get them to release water. Then patted them dry. This was 50yrs ago. I still make Dad's burgers today!

      Ballistic BBQ I consider myself a half good burger chef. My method is grilling them on my Weber Kettle. I've started using 80% ground chuck. Chuck has the best flavor. If you get "ground beef" the meat can come from just about anywhere on the steer. I have been packing the burgers too tight though. I will use smash technique next time. Thanks For a great video!

    Ive had a "Five Guys Burger" I was not impressed. You want a great burger? Take 1/2 lb of 80-20 beef & roll it into a meat ball & place it between 2 sheets of wax paper, press down on it with a pyrax pie plate so you can see what your doing. Keep pressing until you get a even 1/3 inch burger. The burger will be about 6 to 7 inches wide, Dont worry, It wont stay that way. Heat up a cast iron fry pan on high heat & put peanut oil in it. Drop in the burger. As it cooks it will shrink in with but grow in thickness, After 2 minuets flip it. After another 2 minuets it is done. You will have the Juiciest burger in the world.
    Hint, never press down on a burger while its cooking.

      I do something similar, except I liberally coat both sides with salt and pepper to give it a more flavorful crust and, when I flip it, I put a modest pat of butter on top of the burger. Other than that, essentially the same (though I cook mine a bit longer because I prefer medium-well).

Hero burger is probably the best among them, but up there they are killing it in the burger business. They have all your regular fast food like McDonald's and Wendy's, but also like 4 or 5 high quality chains too, of which five guys is on the bottom.

    i would like to purchase your grill. I have the ballistic flat top in my cart on Amazon and I love the idea. I have a question, I already own the craycort cast iron grill on my weber 22" inch kettle. So when i use the flat top do I remove the 2 sections of the grill or place the flat top directly over the cast iron without removing the sections?
