    One of the tricks with five guys is there are some things you just can't order on their burgers unless you're eating it in the store and getting it out of the wrapper as soon as possible. Mushrooms and grilled onions are great on their burgers, but those two drench the buns if you take more than like 5 minutes to get it out of the wrapper.

      Yup. I love the All the Way but when I DoorDash it I just get it dressed with ketchup onion mustard and pickles. The ATW doesn’t hold up to travel. I do wish they could let you order drinks from the Coke Freestyle fountain (Coke with lemon, kids. I wish they put either that or the diet version back out. I loved it sugar or aspartame)

      I don't really mind a soggy bun if I'm getting a takeout burger cuz it sort of just comes with the territory. I do agree with Josh though that those patties are begging for some S&P

    I was really proud to serve the food when I worked at Five Guys. There wasn't a single freezer in the building, and all the veggies and patties and fries were all hand prepped, hand made. Quality food, imo.

    I actually like the squashed bun. It makes the sandwich more cohesive! I don't think they are going for presentation points anyway. He's right about the salt though. No matter how many flavourings you put into something, salt is the magic that unlocks all the flavour!

    Fun facts about Five Guys: I worked at 5 guys for 2 years. We smash all our patties in house. We don't season any of the meat. We use kosher hotdogs and slice them before the grill. Every patty is between 6-8oz per bc we ball them first and weigh them then smash them.
    Do NOT get a cheese burger. The upgrade isn't worth it because the most inexpensive ingredient at 5 guys is actually the cheese slices. It's not worth the extra 2$ for a cheeseburger. Every burger at 5 guys is a "double" unless you specifically get a "little" cheeseburger. Also for the fries.
    We cut them and shift them through a 10k potato cleaner around 4 to 6 times in water until the water runs clear. All potatoes are hand cut in a slicer not by a machine. Usually there's a designated slicer for the morning shift to cut all the potatoes for the day. For every bag we cut is roughly 3 gallons of cut potato fries. On busy days we might cut 12 bags a day. We have to cut it, fill the tank up, filter out starch and shift it then turn the shift machine off drain it and do that about 3 more times. Then do that for every bag. Then fill up buckets and put the fries in that buck and put them in the cooler walk in. Every fry you eat is cut that day in house. As fresh as it gets. The area we get the potatoes from is written on a dry erase board every few days after we get a new batch.
    We do have a secret menu item. The grilled cheese burger. Yes exactly as it sounds. 2 grilled cheese that make the buns then the actual burger with cheese and whatever else you want on it.
    Food hack. Bring the fries home and use the air fryer to reheat them and it's perfect. Use HIDDEN VALLEY RANCH. For dipping. There is no ranch at five guys but it's by far the best thing for them.
    One more thing. To cook the fries they "precook" them by feel. We squeeze the fries right out of the fryer with a gloved hand to feel the texture of the outside. Then they cool for minimum 5min before making the final cook where the inside is soft like mashed potatoes. There's not a single timer it's all based of feel by the fry cook that day so every batch of fries you get is special. They have a standard for a perfect fry every day because it's so important to them.

      @@Patrick94GSR I worked at 5 Guys for a couple years in high school and mostly worked the grill. If I remember correctly it’s a quality control thing along with the fact that we can’t have any pink in the burgers. They are basically all cooked well done to avoid lawsuits, etc.

      I’ve been working at five guys for almost a year in Texas and I can tell you that opening is a b word since we do EVERYTHING by hand and everything is fresh.
      I don’t open anymore but I can say that everything that you said is true..
      Although most of our customers get mad when they see the prices, it’s because our food ain’t frozen, EVER. If there’s one thing I would make corporate change is the cheese!! We don’t use real cheese and only use the process cheese which I think is ridiculous for the price customers are paying for a cheese burger, they should AT LEAST use real cheese.
      We are also about to go under Reno and about to start making sweet tea in house instead of the nasty gold peak tea, which I think is great for any sweet tea fanatics!

    I've been watching this channel for a while now and now just realized that two days before this video uploaded I'd just bought a 1/2'' piece of steel plate for the BBQ and that changed this year's BBQ game!! Since then, everything gets cooked in the charcoal BBQ and stuff like the onions and mushrooms really do get their time to shine on the hot plate!! Meat is also amazing! I heat up the cast iron ribbed plate over the charcoal and just mash the patties with it on the plate, they sear instantly and you get all the beautiful tasties from the stuff you cooked just before... Beautiful!!!!!!

    I used to work at five guys. I'd always season my patties for me with either s&p or the Cajun fry seasoning. Also, the burger doesn't get "smashed" until after the flip. They have a special tool to make sure the patty isn't smashed too flat

      I've heard from other five guys cooks that they weren't supposed to s7p the burgers. "Our beef is so good it doesn't need anything else." Which is the dumbest shit I've ever heard of. The best meat in the world deserve salt. I've only gone a couple of times and every time there was no salt to be found on the burger. Personally I'd rather have a McDonalds burger because at least that shit has salt.

      That’s weird. If you smash it after one side is already cooked, you’re squeezing out all of the good juice. Maybe that’s why Josh said it was dry.

      @@Vitamindmilk A better justification for it given during our manager training is that salt attacks the equipment and pepper burns readily if left on the grill too long. It's a maintenance issue as well as a Branding one. I don't disagree, when I made my own, I snp'ed em readily - but you have the option to ask for them at the terminal. It's just not default.
      Cajun Seasoning also goes well if you're feeling spicey

    Idea for a next Bit Better: make your version and wrap it, go to the place whose item kn the menu you tried to improve, order it and then try both of them. This way you won’t have the advantage of making something fresh and not having to drive it around town wrapped in foil :)

    Here are some fun fact about five guys:
    1.Five Guys started in Arlington, VA, in 1986.
    It's a family-owned business. Four brothers, along with their parents Jerry and Janie Murrell, started it from the ground up. Years later, a fifth brother was born - hence the name.
    2.The family strives to keep a mom-and-pop feel to it. In a video interview with Forbes, Five Guys CEO Jerry Murrell said, "I've always noticed, in every small town, there's always a place where you can get a good burger; usually a mom-and-pop place. I thought, 'Just have a place like that.'"
    3. Five Guys uses fresh ground beef with an 80/20 ratio (lean meat to fat ratio) for its burgers, and employees form the patties by hand every day.
    4.There are no freezers in Five Guys locations.
    5.Five Guys only uses peanut oil.

    There is a reason a lot of fast food chains under season their foods. fries and patties mostly. They then include some extra salt packet along with your serviette. And when looking at the health or nutrient specs, your meal is super low in sodium, while the chain knows you just going to add the extra salt anyways. As long as they do not add it to your food, they do not have to declare the sodium intake as part of the product.

    My first Five Guys experience that I can recall was in Cedar Rapids IA. Pretty sure they even had their own building, no strip mall. Lovely burger, delicious fries and shakes. I'm glad you like it too, and moreso that you still did a But Better challenge with them. Well done on the burger too.

    also the reason we dont season the beef is because corporate claims it "takes too long" because we only get 7 minutes to get an order out starting at the moment the ticket is printed
    i personally think that's bull and I can easily think of several ways to season the beef and still have enough time

    Exact same problem I've got with them as well, just season the damn patties already! To counteract the blandness, I always ask for some cajun seasoning on the side, then sprinkle a generous amount on the bottom patty which makes it sooo much better.

    I've tried making homemade burgers with both pickle chips and pickle slices, and i think i prefer pickle chips. The heterogeneity of the pickle chips really improves the unique-ness with each bite, giving a slightly different flavor profile as you get different amount of pickle due to their positioning

    I am a bit disappointed though that almost always “better” for you seems to mean “bigger”. Waaay bigger. I think your stuff is always perfect enough that you don’t have to turn this into car sized portions.

    I love Five Guys, and yes, I love the thin slightly squished bun. What I don't like are thick burgers. Two thin or smashed burger patties are perfect for me. But yes, it HAS to be seasoned. Lettuce, tomato, mayo, bacon and jalapenos... Occasionally BBQ sauce or hot sauce. ok, now I have to go to Five Guys...

    As someone who works at five guys I will never understand why people love five guys. There’s no seasoning at all the food isn’t frozen in store but comes to us frozen (meat and bacon) also a note five guys uses protabella mushrooms. I always season my burgers before break and yes salt the tomatoes lol. Love the video

    As someone who worked at five guys and worked the grill to be specific I can confirm that no seasoning is used on the meat it’s just straight up 80 20 beef smashed into a patty

    I’m a manager at a five guys here in the UK our service is simple, simple menu, simple operations. We season our grill in the morning using a patty, the buns are new atm we are currently trialling a few recipe not sure if it’s the same in the states tho. As you know everything is fresh never frozen so quality is assured. I hope everyone does enjoy the experience when you go into a five guys as we pride ourselves with the customer experience. A little secret too if you’re still hungry we’ll happily give you more (usually fries)

    Five guys is, for me, hands down the best of the “boutique burger” shops. I agree, they lack seasoning/salt… but in my opinion, allows for the meat/beef flavor to shine. The fries are amazing too.

      Same! I live in Germany and pretty much every local burger place makes their buns that way. They're even drier than the regular American ones bc the dough is really dense. Kinda like regular German bread and t doesn't work for a burger.
      The fact that they barely add any sauce doesn't help. I don't understand why they're so popular literally to the point where they taste the same everywhere.

    Maybe I'm in the minority, but I actually like the soft bun... mooshy and wet, no... but I much prefer a soft slightly squishy bun to a thick firm 'fancy' bun. Also Five Guys cajun fries are the best.

    It's too damn tall by far.
    I suggest removing 33% of the bun's height (simply make the bun flatter). If it's still too tall, make these meat patties - which are fairly thick, considering there are two of them - flatter and wider, even if it means one side is less well seared (or put it in the fridge prior to searing, so it won't get over cooked).
    If even then it's too tall, chop up that slice of tomato and mix it with the onion.

      Yep, too tall. I hate the monster burger; Very unpleasant to eat.
      Also, what's with 1/2 burger being the default now? And Josh's recipe calls for up to 10 oz. of burger.
      To me, 2 - 3 oz. burgers with American Cheese, on a standard bun is the perfect ratio.

    Love your channel! I'm confused with the amount of salt in these burgers. Their website stated the bacon cheeseburger has 1310 mg. of salt, but you said it lacked seasoning. How can this be?
