OK - you got us - it's not really a risotto - but the riced cauliflower and avocado salsa make it a similar texture.
This recipe is vegan, raw, gluten-free but still super fresh and tasty.
Now, if you're now vegan and you're thinking not enough - I dare you to try this recipe as a side next time you cook a roast chicken. Or with chicken for lunch the next day! OMG!

This looks amazing! I make a similar salad or slaw using cauliflower and broccoli rice with other raw veg and top with sunflower seeds and black currants. Super tasty! Will try this recipe though next time! Great video.
