Porcupine Meatballs in Red Sauce | Amy Roloff's Little Kitchen

  • I remember my mom making this dish when I was growing up and then I made it for my kids once in a while. It’s been awhile so here is my version of it. It reminds me of my midwest roots or at least Michigan and that reminds me of home. The rice in the meatballs look like little porcupine spikes after the meatballs are cooked. And the meatballs finish cooking in the rich tomato sauce. Delicious and good comfort food.
    Note: You can cook the meatballs in the sauce or bake the meatballs first and finish cooking them in the sauce. I think either way works out perfectly.
    Ingredients:
    Meatballs:
    1 lb of Ground Beef
    3 cloves of Garlic, minced
    Salt and Pepper
    2 Tbsp Parsley, finely chopped
    2 tsp Italian seasoning
    1 large Egg
    1/3 cup Onion, finely chopped
    ½ tsp Paprika
    ½ cup dry Rice (long grain, Jasmine or other)
    2 Tbsp Water
    Garnish: if desired
    Grated Mozzarella Cheese, grated,
    Parsley, chopped
    Sauce:
    1- 14.5oz can Crushed Tomatoes
    1 - 14.5 oz can Tomato Sauce
    ¼ tsp Red Pepper Flakes
    1 Tbsp Worcheshire Sauce
    Salt and Pepper
    1 Tbsp Parsley, chopped
    2 cloves Garlic, finely chopped
    Few tablespoons, up to a ¼ cup of Chicken broth, if needed if sauce is too thick
    Directions:
    * Preheat oven 350 (if baking the meatballs)
    * Chop up the onions, garlic and parsley
    * In a bowl add the meat, onions, garlic, salt and pepper, Italian seasonings, paprika and mix all together. Then add in the egg and mix til combine. Add in the rice and water.
    * Form the meat into meatballs - about 24, depending on how big you make them. Set aside. If baking the meatballs, place in the oven for about 20 minutes. Don’t worry if they are not completely done. They will finish cooking in the sauce.
    * In another bowl add in the crushed tomatoes, tomato sauce, red pepper flakes, Worcestershire sauce, salt and pepper, parsley and garlic and completely mix all together. If you think the sauce is too thick add in a few tablespoons of broth.
    * In a large deep pan, on medium high heat, drizzle a little olive oil and add the meatballs. Place evenly around the pan. Add the sauce and evenly spread out the sauce to cover the meatballs. Cook for about 10-15 minutes then reduce the heat to medium low and finish cooking for another 15 minutes until meatballs are done cooking in the sauce.
    * Garnish with a little grated Mozzarella and chopped parsley if desired. You can finish serving the Porcupine Meatballs with rice, mashed potatoes and a green vegetable or salad.

    Oh wow ,this is a dish my husband grew up with as a child. I must say this is all new to me ,but it looks delish Amy . I think I will have to get the grandchildren over and make this with them and surprise grandpa. 🧡👍💋New Zealand 🇳🇿 this made me smile.

    Porcupine Meatballs is one of my family’s favorites! I grew up loving this meal in Iowa! I find it to also be a family reunion and potluck dish. I will be sure to try your recipe! I like to make mashed potatoes with mine, too, Chris!

    I grew up in the U.P, (upper peninsula) and lived in Wis. over 55 years and yes these are a midwest favorite. The native Ojibwa people named them the porcupine Mts. becasue they thought they looked like a crouching porcupine..

    Amy.....peel and cut the ends off of the onion off and then rinse it under cold running water, that keeps the eyes dry when cutting it! 😊

    You can't go wrong with any kind of meatball!'I grew up Italian, so meatballs rule! But I also love Swedish meatballs with brown gravy and egg noodles with a side of lingenberry jam. My best friend made Greek meat balls with feta in them and served with tiziki

    I make porcupine meatballs, love them. Cook 1 cup long grain, you get 3 cups. Make your meatballs, use 1 cup of rice like bread crumbs, use regular recipe for meatballs. Roll the meatballs about 1 1/2 in balls bake for 20 minutes, 350 . Then use your regular spaghetti sauce. Put in a casserole dish with the other 2 cups of rice & meatballs. I throw mozzarella on top and bake 15 minutes more.

    My mom made it to. I still do today. A variation I make is using cream of chicken soup or mushroom instead of red sauce. I have to make this soon. I serve with potatoes to.

    Amy those meatballs are almost the way I make my meatballs for my Mexican Albondiga soup🤤🤤I use cilantro instead of parsley.

    The recipe has same ingredients my mother used for the stuffed cabbage rolls when I was growing up. I have just discovered Jasmine long grain rice (from Aldi's in IL) and it smells soooooo good cooking.

    I used to have this as a child, too. But we used brown gravy instead of tomato sauce. I think I'll try it with Impossible Burger!

    That looks really good, its sort of just like a Mexican dish, that instead for tomato sauce it's a soup with the meatballs it's great for this time of the weather with some vegetables thrown in soup as well it is called albondigas in Spanish.

    Oh Amy that was great! made me hungry!!! Gonna be my next meatball meal I make thanks to you!! I really liked the idea of a little onion added too! When I don’t want a ton of onions but some onion flavor, I like to grate some onion to taste into whatever I’m cooking and it works out fabulously! No detectable onion chunks and you get the onion juice too!!!

    Here's a great trick with. Parchment paper, run it under. In a ball ,wring it out and pay dry with paper towels and it will lay flat in any pan. X

    When I make these I use v-8 juice to cook them in. Add a little sugar & it’s good to go. My mom used tomato juice but I was always looking to add more veggies to our diet.

    Cook your meatballs in the oven first then add it to the red sauce. Sounds really yummy.

    Amy is such a wonderful lady , a great cook , a wonderful mom & grandma ., love her , an anything she's involved in . In my opinion she was the Matriarch , she was Rollof farm , an I have no desire to continue watching Matt Rollof an his concubine farm .     Use thyme or laurel for more flavour in ur sauce,and if its sour use sugar, also i use balsamic sauce instead of westchester sauce😅 am from the Mediterranean so I don't think I used the westchester sauce that much! The meatballs with rice r more common with fish meat in my country(sardines).

      Usually most people use lean, never extra lean (made with older meats) it with medium for cost savings. I normally use lean meat due to the waste factor and trouble of having to drain off the fat. Depends on your budget.

    I have a secret to crying when cutting onion....as soon as you feel the tears coming on run your hands under cold water. After I peel my onion I also rinse it under water before slicing it. Pampered Chef makes a chopper .....it's better than the slap chop too

    Tom juice or v -8 work good for the cooking medium. Youll never have dry rice.

    Morton Kosher salt should be where all the salt is on bottom shelf. It’s in a square box.
