Amy Roloff Making ‘Mongolian’ Beef with Vegetables

  • I love making this dish. It’s quick, tasty, and easy to make. It’s not too spicy but I did put a little heat and sweetness into it. When you can combine beef with vegetables, what can’t be great about that.
    When the sauce coats the beef and dribbles over the vegetables and rice, that’s delicious. I know this dish is often made with just beef and broccoli but when an opportunity arises to add in more vegetables how can you go wrong with that.
    I’m sure you have made a similar version of this recipe before. This is my version of this easy tasty dish. I hope you enjoy it.
    Ingredients:
    Olive Oil
    1 ½ tsp Ginger, minced
    4 cloves of Garlic, minced
    ½ cup of Soy Sauce (I use low sodium)
    2 Tbsp of Rice or White Wine Vinegar
    2 Tbsp of Water
    1/3 cup Brown Sugar (I use dark brown sugar)
    A few Red Pepper Flakes (optional)
    1 ½ pounds of Skirt or Flank Steak, thinly sliced (or another favorite cut of Beef)
    ¼ cup Corn Starch
    ½ large Red Pepper, sliced
    ½ large Onion , thinly sliced
    2-3 Carrots, sliced diagonally
    1 12-16oz bag of broccoli or several stalks of broccoli roughly chopped
    2 Green Onions, thinly sliced (garnish)
    Directions:
    * In a small saucepan, heat oil over medium heat. Sauté garlic and ginger until just fragrant - about a minute or two - but don’t let it brown. Slowly add in Soy sauce, vinegar, water and brown sugar. Let it gently boil for about 5-7 minutes till slightly thickened. Add in Red Pepper Flakes. Let it simmer on very low.
    * If not already done, prep vegetables and beef and place in separate bowls
    * In a large sauté pan, heat oil and sauté vegetables starting with the carrots. Add in the onion and red pepper, add salt and pepper and cook till just soften and still has a crisp. Remove.
    * In the same sauté pan, add in chopped broccoli, add salt and pepper and cook till just tender but still crisp. Remove and keep vegetables warm.
    * In the bowl with the beef, add cornstarch and combine until all beef is coated.
    * In the same sauté pan as the vegetables, heat oil on medium to high heat, and add the sliced beef. Sear and cook the meat for about 5-10 minutes till done. The beef does not have to be entirely cooked all the way through as it will continue to cook when combined with the sauce and vegetables.
    * In the sauté pan with the beef, add in the sauce and cook till bubbly and sauce is thickened a little more. Add in the vegetables and mix in with the sauce, if desired.
    * I think the beef and vegetables is best served over white or Jasmine rice.
    Serve the beef and vegetables over white rice and topped with green onions.

    I always lost a layer of ginger during peeling, then I heard if you take a spoon and just scrape it, the peel comes off easily,, and you get to keep all your ginger. Thank you for bringing us these lovely cooking videos. I enjoy them so much!

    Hi Amy I just made this for my boyfriend and my son, at first I was dreading to cook the meat in small batches but your right to say it’s worth the time I just wanted to say it was a total hit ! The steak was soooo tender and I used sirloin but did the rice vinegar and cornstarch trick, everyone reading this make it you won’t regret it, your meatloaf is next on my agenda ❤️

    I just buy crushed ginger in little containers at Trader Joe. You just keep it in the freezer and pop out 1 teaspoon at a time-for me anyway, that’s so easy

    Amy, we have similar cooking styles. It's fun watching enjoy your passion. I've learned a few things from you. Now I would like to share a tip with you. Recently I learned that if you take a spoon (grapefruit spoon works best) and scrape it against the gingerroot. It takes off the outer skin. Personally I started using a butter knife. It's easier to get into all the nooks and crannies. It looks delicious!

    I keep my Ginger in the freezer ,,,,in a plastic bag !
    keeps it fresh and does not dry out
    When you need Ginger take it out of the freezer and grade it!
    Return the left over Ginger back in the freezer ,,,
    Works like a charm “!❣️

    I use the lower sodium soy sauce. With that much in a recipe you will not notice the difference. Love your recipes Amy.

    Amy, love your channel, feel at home with you-like you’re a friend teaching/ sharing recipes. Would like to share with you, when I use ginger and/or garlic, I cut it into chunks, put it into a mortar and pestle to “bang bang.” If you are interested, with this tool you don’t have to slice garlic or ginger so thin because it grinds them into tiny pieces. It’s a traditional Thailand kitchen tool. Thanks again for welcoming us into your home!

    I use to throw away the Broccoli Stem until my Mom(May she rest in Peace) taught me to peel the stem, grate it into slaw, add grated carrot, touch of onions, mayo, lemon juice and dab of mustard! Salt to taste! Delicious with Spaghetti and garlic bread!

    The easiest way to peel ginger is surprisingly with a spoon. I've seen this on several authentic Japanese and chinese oozing shows. And do it often myself. I used to have problems peeling it but I had no problems after that advice.

    Just a suggestion.. if you blanch your veggies it will make the process faster 😉 plus using a wok cooks everything really nice 🙂

      Great idea. I forgot about blanching. If I cooked in a wok more often (maybe I should) I'd get one. It's like a steamer. I don't have one but a colander in a stock pot works well for noodles or a wire cooking basket with handles for steaming vegetables instead of cooking directly in water.
